Here's the recipe for chips for salsa if anyone wants it :o) I haven't tried it yet but hopefully this week I'll be making Pico De Gallo and these :o)

1 3/4 cups almond flour
2 tsp egg whites
2 tsp cold water
1 1/2 tsp coconut oil melted
1 tsp chopped fresh cilantro
1/2 tsp fresh lime juice
1/4 tsp sea salt
Coarse Sea Salt for sprinkling on top.
1. Preheat oven to 350*
2. Place all ingredients except the coarse salt in the bowl of a stand mixer or food processor and mix until a lose ball of dough forms.
3. Form the dough into 8 small balls and roll them out into thin circles between 2 pieces of parchment paper, about 1/16" thick. Remove the top sheet of parchment.
4. Use a pizza cutter to cut the circles into triangles. Sprinkle the chips with Coarse Salt. Carefully transfer the parchment paper to a baking sheet.
5. Bake for 5 minutes. Flip the chips and gently separate them. Bake for an additional 4 minutes, or until evenly brown. Cool on a wire rack before serving.

I lose 60 pounds, but I did gain 20 back.
If you want to know what I did was act like I could not have sugar.
According to the doctor, I can have all the fruit and vegetables I want. You have to limit all potatoes, rice, pasta, etc. Also bread. What I did was have potatoes or rice or pasta every other day and bread the other day. I still don't have much bread, but the potatoes is hard. No sweets except for birthday, etc. That was the hardest part for me.
The doctor who told me this lost 30 lbs.
I have tried sugar free cookies, but they still have calories and will add weight. That is how I gain 20 lbs back.
I also had a 1/2 cup of ice cream twice a week, Sun and Wed.
Easy rules, no calories counting, but hard for me to follow.

If you need to count something, count sugar. You are allow 40 sugars a day. Don't count any sugar in fruits or vegetables. I usually go over by 1 or 2
You must eat small amounts of potatoes, rice or pasta when you do eat them.
One rule a friend of mine used was if you cannot read the ingredients, do not buy it, put back on shelf. She found that she could eat more calories by eating a banana instead of a diet banana muffin.
She has eaten 1800 or more calories and still lose weight by using that rule.

Yep Linda I agree about label reading :-) on the Paleo Diet you don't count calories because you don't eat anything but veggies, meat and small amounts of fruits and nuts, when trying to lose weight fruits and nuts should be small portions. Grains, pastas, breads, rice etc etc shouldn't be eaten unless you splurge for a special day :-)

I have been told I need to lose weight to help prevent the breast cancer from coming back. Something I did yesterday was stir fry (in a non-stick pan) some raw veggies. I had intended to cook them on the grill as kabobs but it was too hot out. Anyway, I now have veggies to eat this week with chicken or by themselves.

funny how we all have different diets we follow.. and they all work..

my thing was Atkins... but as soon as I lost weight and went off the diet I was back to square one.

I weighed in with my starting weight today... I had weighed this amount since this discussion started so I held two bottles of shampoo and weighed again to be sure my scales were working...

hope you all weigh in a little lighter

Starting the day at 166. 3 years or so ago I was 194 so have made some very slow progress.

Chriss, yep :-) I know with the Paleo it's not just till I lose the weight it will be the way I eat from now on, I had to make a life style change, I want to be around to see great grandkids :-)
My goal for September is to lose 15 pounds, I've lost 1 pound, 14 to go :-)

Potatoes....the Dr. my DH first went to for his chelation therapy told him eating a potato is equal to eating a cup of sugar, because of the starch in tater's. So, I rarely have those in our house. We will be making some changes here after I read the book DH forwarded to me. Problem is finding time to read it. :~/ There is some kind of a 19 day diet to clear your system.
