SUPPER CLUB - Wed, Feb 18th
It's eye doctor day for me today. Then stop for bread, milk, and hamburger buns on the way home. After that, laundry, vacuuming, and sewing. hi-ho, hi-ho .
JANA - so happy Gracie is here and all is good! May she live long and prosper! I was thinking the granite might get put off for a day or two. Those ricotta lemon cookies sound nummy. Lemon is my favorite flavor. I'd appreciate that recipe.
JOANNE - sorry it's too wintry to get out to the restaurants. I bet their tables are empty!
IRISH - Glad Kevin approved of the quilt! How's Kathy doing? I am not fond of raisin anything, though I will eat them, rather than miss out on cookies altogether! I prefer craisins.
BECCA - happy birthday to your DB! My DB #1 will be 80 Mar 20th. He's the oldest of our 6 and he's the only one still working. And he's an Alaskan trucker! Often on those ice roads.
Tonite will be grilled burgers and salad. I have some frozen french fries, too, so if DH wants them, we can add that. and maybe we'll have lemon ricotta cookies . . . .
What sounds tempting to you tonite?

Good late morning from cold, snowy, SW. Pa...This is beginning to sound like a recording....BUT, one of these days, new recording, 1 with sunshine and warm temps......
Mary, sounds like you have a full day planned...Hopefully, you'll get good news from your eye doctor...We just went a month or so ago and my RX didn't change but Jim got new glasses, even though, his surgeon had told him his RX wouldn't change...But, he's happy but just in that short time, now I'm having trouble with near or they're making needle eyes smaller..Kathy is doing fine...I was thinking maybe this is God's way of helping her get through the long winter without Chris...My weird way of thinking....

Yesterday about 3:00, I was upstairs sewing and could smell popcorn...Yep, the "chef" did his thing and of course, later when I asked if he was ready, he wasn't hungry and later had cereal...So, the scramble might just make it to the table tonight, unless someone gets into something else....You just never know what's going to happen in this house......

I forgot to post the other BIG news....We have an egg in the eagle nest that's not too far from me....Momma laid the 1st of probably 3, yesterday with hatching to begin in a month or so...This is so exciting but also means, I'll be stuck to the computer......

Here is the Lemon Ricotta Cookie Recipe
INGREDIENTS
2 1/4 cups all-purpose flour
1 teaspoon baking powder
pinch kosher salt
1 cup granulated sugar
1/2 cup (1 stick) unslated butter, room temperature
2 large eggs
8 ounces fresh ricotta , drained
1/2 teaspoon vanilla extract
2 teaspoons Lemon zest, plus 1/4 cup lemon juice
2 cups confectioner's sugar, sifted
INSTRUCTIONS
1. When the cookies are completely cool, make the glaze. In a bowl, whisk together the confectioner’s sugar and lemon juice to make a smooth glaze. Adjust the consistency with a little water or more confectioners’ sugar to make the glaze thick enough to stick to the cookies when dipped. Hold each cookie with two fingers, then dip the top of the cookies in the glaze and let dry on racks until all are done. Let dry for 2 hours before storing.
2. Drop the dough in heaping tablespoons onto the baking sheets. Place in oven, and bake, rotating pans halfway through the baking time, until the cookies are puffed, golden, and cooked all the way through, about 20 to 22 minutes. Remove from oven, and cool on wire racks.
3. Cream the sugar and butter in a mixer fitted with the paddle attachment on high speed until light and fluffy, about 2 minutes. Reduce the speed to medium, and crack in the eggs one at a time, beating well between additions. Plop in the ricotta, vanilla, and lemon zest, and beat to combine. Add the flour mix, and beat on low until just combined, but do no overmix.
4. Line two baking sheets with parchment paper.
5. Preheat oven to 325 degrees F. sift together flour, baking powder, and salt into a bowl, and set aside.
Any questions, just ask - when I make the cookies - I use my mixer for the creaming and I add the flour stirring it in by hand, this doesn't toughen up the batter. I use a small cookie scoop to place them on the pan - they don't spread much so they can be close together.
Dinner tonight - I am in the mood for Chili's - we picked up chinese last night on the way home from seeing Gracie. That is my leftover lunch for today.
The cabinet and plumbers are here - by the end of today I will have the cabinets installed, including the island. Them comes all the trim work and the crown mouldings.

Good Afternoon everyone,Been a snowy day here & very cold tonite below zero temps & hi tomorrow 14 so you get the picture,Very cold for us.
DGS just called & is coming over to spend the nite & work in shop tomorrow.Working wih my DS to learn how to make wooden toys.So I will be cooking more.
Got uglies done & was sewing when he called.Had to stop & dress bed & get room ready.It is my sewing room.I had the quilt spread on bed in pieces.
It will be homemade soup & BBQ chicken breast.No dessert made yet.
IRISH It will be sunshine one day soon for you I hope.

Home made chili here. Made a batch yesterday. I know it will taste even better tonight. It is always a better flavor the second night.
