SUPPER CLUB - Thurs, Oct 23rd
Good Morning!
Still raining here. It's turning into a weather 'event', I guess. I like rain, but enough is enough!
I received a text from our Irish yesterday saying Chris did well with his surgery. She's been through a lot with her boy this year. If anyone wants to send her a card of support, PM me for her address.
TINA - I'm glad you finally got your 'roast soup'! lol!!
I want to make split pea soup, but we'll be having ham leftovers after Sunday, so I'm waiting on that. Tonite will be a baked ziti, I think. along with some salad. Tomorrow will most likely be the leftovers.
What's the plan at your house?

Yesterday afternoon I turned the remainder of the beans into chili. I have enough left for dinner tonight... she said hopefully. The chili was delicious, and there are a few pieces of cornbread left as well.
Jana--I keep thinking about your ravioli! I must make some one of these days. I need to look for a pan or a rolling pin.
We are supposed to have rain this morning. I'm not wanting to go work on the rental, as the stench will be overpowering in high humidity. Wonder if I lay down on the floor and kick my feet and pound my fists...

Hmmmmmm, I don't think I've ever had split pea soup.

Tonight is leftovers so I don't have to worry about supper
I woke up before 5 this morning so I took advantage of the free time and I think I have everything put away in my sewing room.....probably not put away where it should be but hey it's put away

As for making raviolis, get the tray - it is so much easier and makes a dozen at a time, mine are sort of a medium size. The hand pasta machuine is great too. The trick is to fill one half with your filling, cheese or spinach, or what ever you like, then wet the dough between the filling with water, that becomes the "glue" to hold the top and bottom together.
When I first started making them, the ravioli would fall apart as I cooked them. Learned the glue truck and have success now.
The freshly made ravioli freeze beautifully, so make a large batch and you will have several meals.
Spinach filling
1 lg. Onion, very finely chopped - I use the food processor
3 ribs of celery - finely chopped
1 lb. ground beef or turkey
3 beef bullion cubes - dissolved in a little water
Garlic -to your preference
Salt and pepper
1 egg beaten
2 cups (or more) fresh chopped spinach -finely
Cook the onion and celery in butter until translucent, add meat and cook. Beak the meat up into vrry fine pieces as well. When done, add the bullion, egg and seasonings. Stir in the sinach and cook a couple of minutes more. Let cool before filling pasta. You can also use this filling in lasagna.
Dinner tonight is soup - just need to decide on which one, clam chowder, brocoli cheese, taco soup, french onion, or the old stand by, tortilla. Weather is cold here today.

CHICKIE, I have a mental picture of you flailing away on the floor! Maybe you can call in sick? Take pictures if you can! Of the party, not the rental! Tell everyone that those unknowns who came dressed as the Out of Towners say 'hi'!

I'm pretty late tonight! I made a big salad and we had burgers and leftover mac and cheese...the real stuff!
