It's something like the Cotton Theory quilting but just a little different. You quilt your square first and then either put a sashing onto the next block or put the two blocks together. I've seen the demo on youtube but can't remember what it's called.

Thanks Evie and grammiequilts for both of the sites but there was another one that I've seen. They even came out with a template that looks like a square with the center cut out.

The best method of this type quilting is Georgia
Bonesteel's technique. Also Anita Murphy had the best book about this called Reversible Quilting. Her instructions are very simple and easy to understand with great illustrations. She reminds me of El in her books style. It is one of my prized quilt books.
