The only time I really would like to "quilt as you go" would be a very large bed quilt. I machine quilted a King size 106 by 106, only because I couldn't fit it on my frame to hand quilt it.
I tried the "Cotton Theory" and never finished the project. It was really, really stiff like LadyRags said. It was very time-consuming to me and really not worth the effort. My project was a tablerunner, so I just figured it would be simpler and easier to do it the "old fashioned way"!
I know what you mean Kho, I read Georgia Bonesteel's books but had trouble with the instructions. I think I have a big problem with written instructions! LOL! El's instructions are AWESOME though!
I just checked out the link that Evie gave and that was the simplest description of how to quilt a block at a time I've ever seen! THANKS EVIE! :0)

There's another method called fun and done. Where you cut the backing 1" larger and it becomes your sashing. I used it on a fairly good size quilt and loved the results. They make rulers for it but I don't find them necessary. Here's a link where you can see a video of how it works.

I got a pattern from Clotilde catalog & did a scrappy serger/quilt as you go. You don't have to use the serger if you do't want to tho, but it's suggested you use an overlock stitch. It's called "Scrappy Serger Quilt" by Linda Lee Originals. The pattern is well written & has drawings. Easy to understand.
I'm using this pattern method to assemble the blocks of an Amish Fan quilt I started long ago. I had the blocks done, but never got around to assembling them. I assembled the blocks into rows & am quilting as I go. You can use this method to do basically any quilt that's done in blocks or strips. I find it makes it so much easier than trying to quilt a full-king sized quilt after it's assembled. It does seem to take a bit longer to assemble all the parts, but you're quilting each row as you go. You also may need a bit more backing & batting due to cutting in sections & seaming each row instead of using one whole piece.

I have this pattern also. Haven't made it yet so glad to hear it was easy. I got it when I bought my serger last year and wasn't real sure what to do with it once I had it. LOL

I have a couple of customers who quilt as they go they use different methods depending on the quilt - most of them are reversable

Georgia Bonesteel's book that has good easy directions for quilt as you go is called--"Lap Quilting Lives".It is a great help to me when i forget what is next.This is the only way I can quilt using my regular sewing machine as my hands won't let me do much hand work.
