Mini-Mini-Mini Mince Meat Pies - made in a 24 space Mini Tart Pan.

I use the Mince Meat that comes in the Jar.
Uses a Pillsbury Refrigerated Pie Crust

Find a circle cutter that will lay the crust INTO each section of the pan. Use a smaller circle cutter to lay the crust ON top.

Bake 375 for 15-20 minutes until pic crust is cooked.

I posted this over in sew-ins today and somebody asked if I posted it over here, nope I didn't so here ya go:

Breaded Brussel Sprouts
Ingredients

1 1/2 pounds Brussels sprouts
1 teaspoon salt
4 tablespoons butter, melted
4 tablespoons grated Parmesan cheese
4 tablespoons dried bread crumbs
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/4 teaspoon seasoning salt

Directions

Wash and trim Brussels sprouts. Cut an "X", about 1/8 inch deep in the stem of the sprouts, (this helps cook the sprouts more evenly and quickly).
In a medium-size pot, cover Brussels sprouts with water, add 1 teaspoon salt and bring to boil. Cover and simmer for 6 minutes or until tender; drain. Be careful not to overcook sprouts.
Place sprouts in a small casserole dish. Sprinkle 2 tablespoons of melted butter over the sprouts and mix well to coat.
Combine parmesan cheese, dried bread crumbs, garlic powder, black pepper, seasoning salt and remaining butter and mix well; sprinkle mixture over sprouts.
Heat sprouts under broiler (about 4 inches away from heat) for about 5 minutes or until crumb mixture is lightly browned. Serve hot.

HOMEMADE PIZZA DOUGH

1 c. hot water (hot from the tap)
1 Tbsp (or 1 packet) yeast

Mix gently and let sit 5 min.

Add 1 tsp salt (I usually use less)
1/2 tsp sugar
2 Tbsp olive oil
abt 2 c. flour (I use some or all whole wheat)
Optional: herbs or garlic for flavor

Stir to mix. Then knead a few min. Some times I use it immediatlely, pressing it out onto a Pam-sprayed pizza pan, but it's better if you let it raise until double.

Top however you like. A quick sauce is a tomato sauce, sprinkled with herbs and minced or dried garlic but usually I buy pizza sauce.

Here are two recipes that I make with chinese fondue. Enjoy!

Sauces for chinese fondue

Sauce

1/3 cup honey
1/3 cup mustard
1/3 cup mayonnaise

Mix all ingredients together
-------------------------------------------

Honey sauce

1 cup oil*
1/2 cup sugar
1/2 cup honey
1/4 cup ketchup
1/4 cup mustard
1 tsp worcesthire
1 shallot finely chopped

Mix all ingredients together

* You can use vegetable oil, but it's more delicious with olive oil.

Here is my recipe for my homemade pizza dough. Bon appétit!

Homemade pizza dough

3/4 cup water (I use beer)
1 tbsp olive oil
1 tsp salt
1 tsp sugar (I use honey)
2 cups flour
2 tsp yeast (rapid active??) (I use pizza yeast)

Variations - I also add in the dough:

2 tbsp onion flakes
1 garlic finely chopped
2 tbsp dry oregano or herbs of your choice

1. Measure first 6 ingredients listed into baking pan. If you make with the variations, you add the ingredients in this step.

2. Select: Dough/Pasta Setting.

3. Press start

4. When cycle is complete, remove dough from machine to a lightly floured surface. If necessary, knead in enough flour to make dough easy to handle.

5. Top each pizza with sauce, meat, etc...

NOTE: This dough can also be made by hand, manually.

CREAMY CHICKEN LASAGNA
(makes 8 portions)

2 cups grated mozzarella *
2 cans (10 oz) cream of mushrooms **
1 1/2 cups of milk
1/8 tsp ground nutmeg
1/8 tsp red chili powder
10 oz. chopped frozen spinach (defrost and well drained)
1 egg
16 oz. ricotta cheese
12 lasagnas (cooked and drained)
2 cups cooked chicken diced ***
1/2 cup grated parmesan

Reserve 2/3 cup of mozzarella for last. In a medium size bowl, combine and mix the cream of mushrooms, milk, nutmeg and red chili powder. Put aside

In another bowl, combine and mix the spinach, egg and ricotta.

In a lasagna pan (13 X 9) pour 1/2 cup of the soup mixture. Then place 4 lasagna on top of the mixture. <<At each additions of soup mixture and spinach mixture, spread it with a spatula. >> On top, pour 1/3 cup of the remaining soup mixture, then 1/2 of the spinach mixture, 1/2 of the remaining mozzarella and 1/2 of the chicken. Repeat each layers in same order and by finishing with a row of lasagna and the soup mixture. On top, pour the remaining mozzarella and sprinkle with the parmesan.

Cook in a 350° F preheated oven for 40 minutes.

* I love cheese. I put 3 cups instead of 2

** You can use also 2 cans of cream of celeri or 1 of celeri and 1 of mushrooms or whatever cream you like.

*** I put 3 cups of meat instead of 2 and make it with ham instead of chicken.

It's different of a traditional lagasna. Hope you'll like it! :-)

HAM AND POTATOES AU GRATIN

3 cups of cooked potatoes, diced *
2 to 3 cups of cooked ham, diced
1/4 cup scallop, chopped
1/4 cup green bell pepper, chopped **
2 tbsp of butter
1 tbsp of flour
black pepper
1 cup of milk
1 cup of shredded cheddar
1/4 cup of mayonnaise

Preheat the oven at 350°F

In a large pan, cook gently the scallop & pepper in the butter (about 5 min.). Sprinkle the flour and add pepper.

Add the milk and bring to boil in mixing constantly.

Reduce the heat and add the cheddar and mayonnaise. Mix till the sauce is homogeneous?. (not sure of that word.)

Add the ham and potatoes, mix well and pour in a pan.

Cook for 35 to 40 minutes.

* First, I peel and dice the potatoes and put them to cook. While they're cooking, I prepare the rest of the recipe.

** If I have green, red, yellow and/or orange bell pepper, I put a bit of each (to put a bit of color in it).

I just found out about the recipe section so I thought i would add my crockpot roast recipe here.

Crockpot Roast Recipe

1 package of brown gravy mix
1 package of dry Italian dressing mix
1 package of original dry Ranch dressing mix (not dip or mayo type)

mix all together and pour over roast in the crockpot adding 1 cup of water

I use either a rump roast or sirloin tip (2 or 3 lbs)

Cook in crockpot on low anywhere from 6 to 8 hours. I find it is best for us around 7 hours.

I also usually add potatoes and mini carrots and boy do they taste good.

Hope you all enjoy this as much as we do up here in Ohio
