I'd love to make the Earl Grey cupcakes, but even though I printed out a conversion chart, my brain just can't wrap around converting the recipe!!

joanne what measurements do you need them to be in......if its cups, can you fill a cup with flour/sugar, etc and then weigh that amount and see how close it comes to the uk weight amounts :)

sorry i didn't even think about you guys having different weights and measures

1 c (8 fluid oz) = 250 ml
8 oz. solid cup = 225 g

Jules, THANKS!!! I was really close on my "guesstimate" of the quantities.

Edit: Joanne, the butter would be one stick or 1/4 pound or 1/2 Cup. A pound is about 435 grams, so 1/4 lb. would be about 110 grams.

STEAK a la PIZZAOLI
Recipe from Doris Roberts' autobiography
(she played "Marie" on Everybody Loves Raymond. I remember one episode featuring this recipe)

2# boneless sirloin steak, 2" thick
1 large can whole tomatoes
3 large cloves garlic, chopped
S&P
I TBSP Oregano
2 TBSP Olive Oil

Preheat oven to 350*. Trim all fat & cut steak into 1/2" strips. Place steak into baking dish. Pour tomatoes over meat. Add garlic, S & P, and oregano. (and that is a full tablespoon). Stir. Drizzle olive oil over top. cover with foil. Bake 1 hour. Uncover, stir, and recover. Bake for another hour. Serve over pasta.

Serves 4

Thank you Jules for trying to help me, but now my head really hurts...I think you can't teach an old dog new tricks...at least me! lol! Think I will have to pass on this recipe.

Mary, that recipe is so simple I love it! Will definately try it as soon as I get to the grocery for the steak. I have plenty of oregano..I grow it and dry my own so I love to be able to use it in something besides speghetti sauce.

CHILI RELLENO CASSEROLE

1 7oz can whole green chilies
1-1/2 c. shredded cheese of your choice
3/4# ground beef
1/4 c. chopped onion
1 c. milk
4 eggs
1/4 c. flour
1/4 tsp salt
1/8 tsp pepper

Split chilies and remove seeds. Pat dry with paper towels. Arrange chilies on the bottom of a greased 2-qt. baking dish. Top with cheese. In a skillet, brown beef and onion. Drain. Spoon over cheese. In a mixing bowl, beat milk, eggs, flour, S&P until smooth. Pour over beef mixture. Bake, uncovered, at 350* for 45-50 min or until a knife inserted near the center comes out clean. Let stand 5 min. before serving. YIELD: 6 servings.

I like to serve this with salad, refried beans, Mexican rice, cornbread, warm flour tortillas, or any other Southwest side dish.

Miss Purr-fect - thanks so much for the recipe - it looks absolutely delicious. Yum! I think the first time out, I'll serve it with semi-homemade tortillas.

Mmmmmmm....

This soup is so yummy & warming.

SOUTHWEST CHICKEN STEW

2LBS Chicken cut into bite size pieces
1tablespoon oil....I needed a little more
2cups onion chopped
1cup chopped green/red pepper
2cloves minced garlic
1tablespoon chili powder
cayenne to you taste
1teaspoon dried oregano
3cups cubed potatoes...I used white & sweet
1-14.5 can chicken broth
1-14.5 can chopped tomatoes
1 1/2 cups frozen corn
1/2 cup cilantro....I used the whole bunch

1) brown chicken in oil.
2) add onions, peppers & garlic, saute 3 mins
3) add chili pd, oregano, potatoes & chick broth. Cover cook 45 mins
on low heat.
4) Add tomatoes, corn & cilantro. Cover & cook 10 mins.

I added a few tablespoons of flour to browning chicken to thicken it.

I added a can on creamed corn plus the frozen

I also make it with tofu. Drain 2lbs tofu on paper towels or dish cloth, all day or over night. Slice it down the middle & brown on both sides. Cut into bite size pieces. If you have never used tofu this is a good recipe to try!
