Cranberry Orange Cake

2 1/4 c. sifted all-purpose flour
2 c. sugar, DIVIDED
1 tsp. each: baking powder, soda
1/4. tsp salt
1 c. each: chopped walnuts, diced dates, whole fresh cranberries
Grated rind of 2 oranges
2 eggs, well beaten
1 c. buttermilk
3/4 c. salad oil
1 c. orange juice

Sift flour with 1 c. sugar, baking powder, soda and salt, mix with nuts, dates, cranberries (I cut the cranberries in half), and orange rind. Combine eggs, buttermilk, and oil; add to flour mixture. Stir until blended. Pour into greased and floured 10-inch tube pan. Bake at 350° for 1 hour. Let stand in pan until lukewarm; turn out on cake rack placed over a shallow pan. Combine orange juice and remaining 1 cup of sugar; dribble over cake. Continue dribbling until absorbed. Refrigerate, covered, for at least 24 hours. Serve plain or topped with whipped cream.

I cut this recipe out of the newspaper MANY years ago. I am not an enthusiastic cook, and seldom try a recipe for anything that I have not eaten, but this sounded good. It's been a family favorite!

And then, since you may have buttermilk left over that you don't have a plan for, here's my Grandmother Nichols' recipe for a good breakfast bread:

Baked Brown Bread

3 c. whole wheat flour
1 c. white flour
1/2 c. sugar
1/2 c. molasses
1 tsp. salt
1 1/2 tsp. baking soda
2 c. buttermilk (or sour milk)
1 c. raisins, dried cranberries, or dates

Mix all together and bake in 2 small (7 3/8 x 3 5/8 x 2 1/4)greased loaf pans for 1 hour - or 1 large (9 1/4 x 5 1/4 x 2 3/4) greased loaf pan for 90 minutes at 325°.

When I was a child this bread was my Christmas gift to my teachers, and I continued the 'tradition' for my kids.

(I make this OFTEN, but have only done it in the small pans, so can't vouch for the timing if you use the large pan. HOWEVER, my Grandma Nichols would never lead us astray!)

I have been printing off recipes. Now I'll have to try them. I made the chicken one for my sons when we were gone. I put it in the oven before we left, with the directions, remove chicken, stir in sour cream-they forgot that part-it must have been the boil water-add rice-stir-cover with lid and wait 5 minutes that confused them.

I remember years ago when I was away from home and my son Jeff was in college. He called me and asked how to make a Kraft Macaroni and Cheese. lol, he forgot to drain the water after boiling the macaroni and couldn't understand why it was so watery!!! Awwww... fond memories!

Maybe someone can help me with this...all you cookin' and bakin' ladies! I bought a large bag of pecans (chopped) a few months ago from a vendor at an antique machinery show. The bag says "Raw Pecans". Do I have to toast them or something before I can use them in cookies?????? Maybe you can help me!

Hi Joanne,
Pecans are my favorite kind of nut and I love to add them to cookies and cakes, and just about everything else. You use them raw in cookie batter. You can even eat them raw, they are wonderful!

I need an easy recipe for a Chocolate Festival. It can not be cake, brownies, etc. Folks will buy a ticket for $6.00 and then can chose 6 pieces of chocolate. Proceeds will go to the library for the summer children's programs.

I would really like a sugar-free recipe if anyone has one to share. Did I mention whatever the recipe it will need to be simple?
