SUPPER CLUB - Sat, May 21st
Good Morning!
It was a tossy-turny night here and Mr. Dog didn't help any. My eyes are burning this morning. I may break down and take a nap today.
IRISH - oh no! You have an owie and are on the DL?! Chickie is right - if it gets any worse, you probably need to have it checked out - as in an X-ray. My sis had a similiar injury back on St. Patrick's Day. She didn't think much of it, and went on about her errands. But turned out she'd fractured her elbow. Now it will be double nice to have Terry visit!
CHICKIE - did you talk him into the burger bar? I've been looking for some begonias, too. Love them! But so far, last I checked no one here had any yet.
BECCA - will be praying for Courtney and watching for an update.
JANA - sounds like your house will be filled with lots of joys! Your cheater chili is much mine, but I use kidney beans instead.
I know I said yesterday I'd make pizza today. But I just remembered that we are going out for pizza tomorrow with DH's family to celebrate their uncle's birthday. Uncle has no other family. So I need to figure out something else. I'm thinking tamale casserole or else some of that homemade chili. Or a breakfast scramble. Or it could be burgers on the grill of weather doesn't become an issue - which is might. Bill will let me know what sounds good to him when he wakes up. Anyway, we will be fed.
And I hope you will be, too!

Good Morning Everyone!
Maryz - My DH went back to bed this morning. I tend to go to bed early on Friday and get up about the same time as usual, 5:30, so I can enjoy my day. I had the day off yesterday though and did get in a nap.
Becca - Prayers for Courtney and baby girl.
Jana - Funny story about Ethan and the raccoon. Too bad he did not see a real bear.
Irish - You and Jim are in my prayers too.
Today we will have leftover Mediterranean Chicken. It was even better this time than last time. This time I used dried basil, but had home grown cherry tomatoes. Also mashed potatoes and broccoli.
Have a wonderful day!
Carol

Re: SUPPER CLUB - Sat, May 21st
Good afternoon! I had a really good visit with Mom today. She’s making progress cutting out her quilt pieces. We had lunch—those yummy Braum’s grilled chicken spinach Waldorf salads! Odie went to town with me, and he patiently waited for a few chicken morsels to go his way. What a little opportunist!
Alas! I couldn’t talk DH into burgers at the bar. I had picked strawberries and started to make jam. When I got them measured, I didn’t have enough berries by a cup. DH said that was no problem, I could make strawberry shortcake. So, I made biscuits for the shortcake. And, I made ham salad with ciabatta rolls for him and veggie soup for me. No one starved!
Jana—that’s about how I do chili as well, but I use dark red kidney beans and/or black beans (whatever beans I have in the pantry). I didn’t know it was Cincinnati chili if it was over spaghetti noodles. Here that’s called spaghetti red and is served with lots of chopped onions, dill pickles, Parmesan cheese and crackers. It’s probably my favorite way to eat chili. Oh, that’s so funny about the raccoon being a bear! Are you keeping a journal of Ethan’s Adventures? What great stories to tell HIS children!!!
Becca—I’m watching for a baby report. I also got some new lures for those elusive pond fruit. They WILL be caught and put on the dinner table!
Irish—sure hope you are feeling MUCH better and cooking for Terry! Listen to Nurse Mary and get checked out if you need to… before you develop serious problems!
Carol—your chicken sounds delicious! When is your official retirement date? You will love it!!!
I have a funny story… Yesterday DH went out in the pasture to cut up a downed wild cherry tree. It had been dead for a long time but he had left it for the woodpeckers. It blew over in the last storm, and he wanted to clean it up. He took our trash with him to burn and get the fire started. The trunk was super rotten and hollow, so he stuffed the trash in one end and lit it. Then he stacked limbs and brush at the other end and lit it. After an hour or so, he was raking up stray debris and putting it on the fire, the log was smoking and burning nicely. A broken off branch looked like a chimney with smoke pouring out of it. All of a sudden… a blackened armadillo literally hot footed it out of the log, through hot coals and off into the brush! He had no idea the armadillo had taken up residence in the log as it hadn’t been on the ground but a week or two! I know my DH will eat about ANYTHING, but smoked, blackened armadillo… I think NOT!!!
And that brings us to tonight’s dinner… The rest of the strawberries and shortcake, for sure, and there is ham salad and soup left, or I have fajita makings… I’ll ask him what he wants.
Enjoy!
P.S. I really did feel sorry for the armadillo, but they should have stayed in Texas! They are a nuisance here as they dig up gardens and yards. I suppose they eat grubs, but they sure do damage! I always think of the armadillo cake from Steel Magnolias!

Hi Chickie - My official day is June 3rd, and I may not be working that day anyway. Your Armadillo story is funny, but I feel sorry for the animal. The chicken was wonderful.
