SUPPER CLUB - Tues, Oct 28th

Happy Tuesday!

A rainy Tuesday! Glad we got most of our outside stuff done yesterday. I think today will mostly be putting around inside, not doing much of anything of import.

I talked to Irish yesterday afternoon. Her son now has a fungal infection in the new heart valve that was replaced last April. They are hitting him with big gun antibiotics. He isn't a good surgical prospect at this time. She says "it's not looking good".

Yesterday I made a casserole of ham, baked sweet potatoes, asparagus, broccoli and I bound it all together with a jar of chili con queso dip. It was really good! now we have leftover casserole! lol!

Tonite, though, we are invited to friends for supper and cards. She asked me to bring a salad. I really get tired of tossed green salads. Fruit salads are her 'thing'. They are both diabetic. I'm thinking of taking a 3-bean salad. That would be different.

MaryZ--dinner with friends will be fun... you aren't doing all the cooking this time! I like the broccoli, sunflower seeds, raisins, etc. salad, too, for something different. Of course, I do like green salads with LOTS of ingredients... peppers, red onions, olives... much like Olive Garden--just not as much dressing. Something else that is pretty cool is the 50s salad--a wedge of iceberg lettuce with thousand island dressing. I know it has a "famous" name, but I can't think of it. I also like 3-bean salad; so does Mom. DH doesn't like anything where he can taste vinegar in the dressing. He's a Ranch guy with very little variances from it. Actually, if I leave off the salad for him, he's quite happy.

Your casserole last night sounded good.

Our corn was delicious! DH had steak, and I had grilled tofu. We (I) had peppers and onions and grilled mushrooms as well. We had one of those tiresome green salads, but mine had avocados and olives and bleu cheese. His was plainer with cheddar cheese shreds.

I think I'll take Mom in a little dish of corn to add to her dinner. My sister and BIL left her several dinners, and I'll try to make some f--h while they are gone, as she really enjoys it, too.

Good Afternoon All......what started out as a grey and depressing day.....has actually turned out to be a not bad day after all......

THOUGHT FOR THE WEEK:-

YOUNG AT HEART.....OTHER PARTS ARE SIGHTLY OLDER.......

well after going AWOL.....which was not my intention.....I am now back.....not really full of vim and vigour.....but back in the fold....or should I say back at the table......

My trip back home was an almost 100% success......3 cousins were missing......these were the ones I hadn't seen in nearly 60 years.....so a bit of detecting may be in my future......however the 3 I used to babysit I did meet up with....and it was so good to see them all together again......they had been apart for 15 years...but are now back together again as a family....

and I am so....so...so.....pleased to report....those illegal immigrants that were staying in our hotel.....had been bussed out a few days before our coach arrived.

Now I haven't had time to check back on everything....so I don't really know the state of play.....so I am a new girl all over again.....except that our Irish"s son Chris has got problems....SO....IRISH....I hope and pray that things will get better for Chris.....he has had more than his fair share to contend with.......

Remember our electric that was to be sorted.....well....that is yet another tale to be told at a later date.....maybe tomorrow....

and so to todays menu.....Home made Beef and Onion Pie...Creamed Potatoes....Carrots and Sprouts......Blackcurrant Cheesecake for afters.....

Good morning,

Glad to see the table set - tonight is game 6 and activity day girls - my afternoon is busy! Made tortilla soup last night - had a very hot jalapeño - that soup will be DH's dinner and I will have bangers and mash - English translation - sausages and mashed taters - also leftovers.

Hello Everyone,Sunny again but rain is due tomorrow with cooler temps on the way.YAH!!!!!Will help get rid of those pesky bugs.Bettles they are.

CAROL So glad you had a good trip & see family again.

CHICKIE I would have loved your corn.I have not had any good in 2 yrs as I quit freezing it.

MARYz Your casserole sounds different but sure it was tasty.

Will be making stir fri.Cooked cabbage,carrots,& cookies for DH. Becca

Mary, have you ever made Frog Eye Salad? It's probably more of a dessert salad though. I don't know about for diabetics but Mom and her sister ate it like gangbusters and they are /were diabetic.
Were having "mac-n-cheese" tonight, salad or coleslaw and maybe asparagus :-)
Chickie, I like alot or a little in my salads :-) depends on my mood and if I have anything in the house to throw in it ;-)

Talking of what to put into salads...hard boiled egg, shredded cheese, red onion, green onions, tomatoes, bacon bits. Chickie, I'm with your DH on the vinegar...unless it has equal parts of sugar!

I've taken out a chicken breast for tonight...I'm not inspired though..maybe some shake and bake and mac and cheese..we'll see.

Welcome home, Carol! I've been in and out, so I'm always playing "catch up"!

Jana, your dinner sounds good to me...

Becca you and Irish will probably be getting our today's rain...and it's in the 60's, but cooling fast.

Ok, Tina...what is Frog Eye Salad??????????????????

Tina and Joanne--I know what frog eye salad is. I've made it several times in years past. Tina, you are right--much more of a dessert. Joanne, it's made with that tiny acini de pepe pasta. Don't make the whole recipe on the box unless you plan to serve a multitude! It is good for BIG family dinners, however.

Lady E--welcome back! Sounds like you had a great family reunion--too bad some were missing! Hope you find them with your detective work!
