SUPPER CLUB - Fri, Oct 17th
Good rainy morning, everyone!
ABITA - haha! Sorry, about the double posts yesterday! But you CAN be the first. You just gotta get up 5 min. earlier! lol! Your Ducks Unlimited Banquet sounded like - it was bad, but I gotta go with it - a "quack". And such a worthy cause. Are they mainly concerned with fowl, or are they all animals? I love animals. And you'd know that's true if you saw the wet black dog laying on the white loveseat 6 feet from me right now!
Irish wrote a PM to me. She is in need of a huge hug. We all know Chris has had a very bad time of it. He was taken off the ventilator and was doing OK with oxygen via a nasal cannula until they did his dialysis. He always has such a difficult time breathing through that. Now he's back on the vent, in ICU, puzzling his doctors, and scaring the wits out of his mom and his wife. The docs think he has a fungal infection in one lung and this morning is undergoing a procedure to try to scrape the lung and the chest wall clear of the fungus. She says she just couldn't write all that down in the Supper Club but asked me to let you all know. It's a worrisome time for their family.
And as for supper - my chicken and noodles wasn't as bad as I thought it would be since I was just winging it at 5pm with no recipe! Of course, as always, I have a mountain of leftovers. I think I'll add a few more things, some cream of chix soup, and turn it into a casserole for tonite.
I told Irish we were sending her a cyber home-cooked pot-luck meal. Let's all send our favorite comfort food. Mine is macaroni and cheese. The REAL stuff! What's next on her menu? What would you send her?
Mary, aka, "the Lady from Washington". We could just shorten that and call me Lady Washington. That's got a nice ring, don't you think? Thanks, Abita, for the new moniker! lol!

Good morning Mary and all that follow. First and foremost - Irish, please know my whole family is praying with you. I hope you can feel the warmth of our hugs. Please remember, in the lonely times, you are not alone. EVER
We had a great time last night at the Ducks Unlimited Banquet. The dinner was pretty good considering it was catered by a local restaurant. Ducks Unlimited is very active in creating wildlife refuges in Canada and through out the U.S. They are all about keeping the breeding grounds and wetlands healthy for water fowl, but other wildlife (and humans) benefit also. There are other "Unlimited" around. For example, we belong to Quail Unlimited. I think there is an Elks Unlimited and a Pheasant Unlimited. All of those organizations have the same mission: promote healthy breeding grounds, wildlife conservation, ethical hunting practices, and sportsmanship. If you get a chance to go to a DU Banquet in your area, go. It's a "boat load" of fun. And you might win a raffle.
It's a cool 52* this morning, but that will quickly warm up to near 80* this afternoon. DH is home today, OMG! I think he is going to cook chili. (There goes my clean kitchen!!!)

Irish--cyber hugs to you and your family!!! I know these are difficult times for you all.
Abita--I missed your post yesterday. DH's uncle was a wildlife artist and did some paintings for DU. Do you remember M. Wayne Willis? We used to have some originals of his before the fire. We have found several of the prints at auctions and online. My DH is working here on the farm with a quail habitat program through the State of Kansas. We have a wetlands pond that isn't available to the cattle. We also have ducks and geese come to our pond behind the house. DH put up a wood duck box, and we are hoping they find it, although we haven't seen wood ducks here yet.

Here is a copy of our Old Recipe from my mother: It's been a family favorite for years. But I have made it a lot more simple with using only Chicken breasts and boxed chicken broth.
Years ago, I made a recipe booklet for each kid and their families. Even my DILs learned to make this for their hubbys.

CHICKEN NOODLE CASSEROLE
This is Grandma's recipe handed down. It has been a favorite in the family for many years.
Pressure cook 1 whole chicken & remove meat from bones reserving 2 cups broth (or buy precooked chicken in a can & use canned chicken broth) 1 pkg of noodles cooked and drained (they are 12 oz pkgs these days instead of 16 oz like years ago) 2 can of whole kernel corn juice from 1 can , 1 jar of pimentos, 1 lb of chunk velveeta cubed
2 cups milk, 2 heaping TLB flour, 1 stick marg.
Melt marg, stir in flour, add milk slowly & stir constantly until thicken, remove from heat & stir in velveeta chunks,
keep stirring until cheeze melts, mix all of the rest of the ingredients, meat, broth, corn, pimentos, and cheeze sauce.
Put in large baking dish and bake 60 min. 350 degrees. covered until the last 15-20 min = uncover and let the top get brown.
You can separate this recipe before baking into three meal portions and freeze for another meal time.
You can use corning ware that goes from the freezer to cold oven and bake for 1 hour at 325 degrees. then raise the temp for last few minutes if you need it. You also can speed up the thaw with microwave, then bake.
Orange jello carrot salad, was the side dish, and dinner rolls and homemade pickles.

Now, when I make it I do it on top of the stove and don't even bake it. DH and I love it. I start with 3 chicken breasts cut in bite size pieces, brown and cook in a skillet. Put box of broth in dutch oven and cook noodles (I cut the recipe in half, since there is just the two of us) in the broth, then add one can of corn (juice drained) a small jar of pimentos (mostly for color) Then add the cooked chicken and simmer while I make a paste of flour and milk and cook in small sauce pan to thicken. Last I remove from heat and melt the velveeta into the sauce. When all creamy, I stir it all together. Wednesday when I made this, I had to add a little more thickening as it was too much like soup.
We had just enough leftover for tonight's dinner. YUMMMMMM!!!
