SUPPER CLUB - Wed, Aug 27th
Hi there!
A mild but cloudy morning we have. And rain is coming for the Labor Day weekend. I can deal with rain. I've really missed it this summer. After all, I do live in Western Washington!
TINA - we had our leftover pizza last night - but it wasn't flourless, I'm happy to say! I'm curious how you make that.
IRISH - haha! You didn't miss a thing! We haven't decided yet what we're getting - carpet or flooring. Hopefully today is the day of decision. We're going to the carpet store in a few hours. I know what I want. It's my ever-lovin' DH who can't make up his mind! He assures me that TODAY is the day! (I'm rooting for carpeting, being the Barefoot Contessa that I am!)
TINA - I love a bit of kick, too, but not HOT! And for those who don't know, Hatch is not a variety or brand name, but the name of the town where all these chilies are grown. I was confused for a long time until we happened to drive through Hatch one year and it suddenly clicked with my brain!
CHICKIE - our avodacoes come from Costco and I haven' been buying them because they've been so crappy lately. I broke down and got some last week and nothing's changed. Grrr..
Oh, I got to git! dog is whining, timer is going off, and I'll be late to meet Walking Lori! Since we at the leftover pizza last night, tonite will be the pork chops, corn on the cob and salad.

Good morning! We will have more of the tamale pie I made last night--lots of tomatoes, salsa and lettuce with some cheese and sour cream. Avocados would be THE BEST with it, but I'm not paying $1.48 for a tiny little, over-ripe, mess from Mexico.
I made the jam yesterday. It hasn't set up. It would be good upside down apple pie a la mode... especially on a waffle. (Did you catch the ice cream in there, too?) Maybe it will eventually set up. Oh well. It definitely tastes good.
Thanks for the info about Hatch. I had no idea. I like a nice warm kick, but I'm not really into breathing fire unless there is a bowl of sour cream handy.

yes Hatch Chile comes from Hatch, New Mexico about an hours drive away from me
my Dad plays guitar and sings in Hatch every Friday night at Sparky's restaurant, it's made national news for having the best green Chile burgers
Mary, the pizza crust uses almond flour I believe which is just fine ground almonds
alot of the recipes call for almond flour, tapioca flour, coconut flour.
I don't have parmesan cheese so pizza still has to wait so tonight will be pork chops on the grill, zucchini and salad.
Chickie, I totally forgot about the tortilla chips recipe, here it is:
1 3/4 cups almond flour
2 tsp egg whites
2 tsp cold water
1 1/2 tsp coconut oil melted
1 tsp chopped fresh cilantro
1/2 tsp fresh lime juice
1/4 tsp sea salt
Coarse Sea Salt for sprinkling on top.
1. Preheat oven to 350*
2. Place all ingredients except the coarse salt in the bowl of a stand mixer or food processor and mix until a lose ball of dough forms.
3. Form the dough into 8 small balls and roll them out into thin circles between 2 pieces of parchment paper, about 1/16" thick. Remove the top sheet of parchment.
4. Use a pizza cutter to cut the circles into triangles. Sprinkle the chips with Coarse Salt. Carefully transfer the parchment paper to a baking sheet.
5. Bake for 5 minutes. Flip the chips and gently separate them. Bake for an additional 4 minutes, or until evenly brown. Cool on a wire rack before serving.
I haven't made them yet but my cousin in law that gave me the recipe says they're good

Good early afternoon from warm but now partly sunny...I did think I heard a rumble or 2 but it could have been my imagination or the cats having a good time upstairs....
Mary, you're sounding like Jim...But, I do have to agree, I do like carpets in most of the rooms and would you believe, every room in this house has carpet, even the bathroom.....And I don't see a change any time soon.....Our big decision here will be windows...So far, I've only gotten one but want more replaced before winter....And then of course painting.....
I envy you gals being able to eat "hot" stuff...Long gone are the days of garlic, fresh onions and anything spicy....
I'm thinking our dinner might be made by someone else...We have to make a funeral home visit later this afternoon and if I play my cards right, someone who will remain nameless will say, "how about if we eat out?".....

Chicken didn't appear on my plate last night, hot cakes did, so tonight I think that the chicken will. The weather is supposed to be better. It will be easier to make a chicken run here, shortly the Popeyes will be finished here in Herriman - now I don't know if that will be good or bad! LOL

That's so interesting about Hatch. I had never heard of it. Crazy!

Good Evening All......another grey day...however.....the weather man said the high pressure is coming back and the summer could be coming back......so you never know....we could be heading for an Indian Summer.....feels like years since we had one......
Jana.....I"m with your uncle on the "cook" bit.....would love Sir to say....that's alright I"ll cook tonight"...gurgle.....gurgle.....like that's going to happen.....do you know what......I don't think he knows how to use the cooker.....I definitely know he doesn't how to use washing machine......and I don't know how to mend a fuse.....so that makes us quits(I think)

Left over Shepherds Pie(getting good on the leftovers now) Carrots and Peas......Sticky Toffee Pudding and Custard for afters.......
