I want to share a really good Peach Cobbler recipe with you all. El made one and brought it in to QIAD and everyone loved it:
Easy Peach Cobbler
1/2 cup unsalted butter, melted
1 cup all-purpose flour
2 cups sugar (divided use)
3 teaspoons baking powder
Pinch of salt
1 cup Milk
4 cups peeled, pitted and thinly sliced fresh peaches (5 to 6 medium peaches)
1 tablespoon lemon juice
Optional: Several dashes ground cinnamon or ground nutmeg
Directions:
Preheat over to 375 degrees
1. Pour melted butter into a 13" x 9" x 2" baking dish
2. In a medium bowl, combine the flour, 1 cup sugar, the baking powder and salt. Mix well.
3. Stir in the milk, mixing until just combined. Pour this batter over the butter but do NOT stir them together.
4. In a small saucepan, combine the peaches, lemon juice and remaining cup of sugar. Bring to a boil over high heat, stirring constantly. Pour the peaches over the batter but do NOT stir them together.
5. Sprinkle with cinnamon or nutmeg if desired.
6. Bake in a preheated oven for 40 to 45 minutes or until the top is golden brown. Serve warm or cold.
The peach mixture will sink to the bottom and the batter bakes up over it. Yummy!!

I just made this the other night. Ihadn't made it in a while and I forgot how good it was. You can make it a bit more healthy, but it is AWESOME this way. I like it because it is a one dish meal, and goes together in 30 minutes
Fettucini with chicken and broccoli
1 15 oz box fettucini noodles
4 whole chicken breasts, or left over chicken, cut up
1 bag frozen broccoli
2 1/2 cups heavy cream or half and half (I use the half and half)
scant 1/2 cup lemon juice
12 tablespoons butter
garlic to taste
1/2 cup parmesan cheese, grated, either fresh or in the shaker works fine
parsley flakes
optional ground nutmeg
Boil 1 box of fettucini noodle according to directions. DO NOT OVER COOK!
In a skillet, saute chicken breasts until done, about3 minutes each side. Remove from skillet to cool slightly.
Cook broccoli in microwave until warm. Drain.
Cut up chicken into bite sized pieces.
In a skillet or dutch oven, combine butter and cream over med/low heat until butter is melted. Add lemon juice, garlic and nutmeg, stir until combined. add chicken, broccoli, stir to coat.Add parmesan. Stir. Toss in noodles, and heat until well coated.
Serve with garlic toast or bread.

4 squares (1 oz each) semi-sweet chocolate
1 jar maraschino cherries, well drained
Coating:
6 squares (1 oz each) semi-sweet chocolate
2 Tablespoons shortening
In a small saucepan, bring cream, butter, and sugar to a boil, stirring constantly.
Remove from heat, stir in chocolate until melted.
Cover and refrigerate at least 4 hours until easy to handle.
Pat cherries with paper towels until very dry. Shape a teaspoonful of the chocolate mixture around each cherry, forming a ball.
Cover and refrigerate 2-3 hours until firm.
In microwave, melt chocolate and shortening. Mix. Dip cherries to coat them. Place on wax paper to harden.
Yield: about 2 dozen.
Keep cool until ready to eat.

I have that Peach Cobbler recipe it is delish. You can also use frozen mixed berries (thawed), also very very good

I made Els cobbler,,,man is it yummy!! I used a tad less sugar ,as I used frozen peaches,and I didnt have any lemon juice,so I threw in a tablespoon of dry lemon pie filling. Its so GOOD! Thanks for sharing,Linda!!!!

It must be the day for cobbler!! I made El's cobbler, too!! I had some fresh peaches I had frozen and used those -- it's soooo easy and sooooo good!! Made my DH really happy tonight!
