Veggie Packs
When we used to go camping at the beach, this was my family's favorite.
Chop up potatoes, carrots, mushrooms, green beans, onions, bell pepper.
Divide the vegetables evenly on sheets of aluminum foil (one foil for each person)
Add a pat of butter to each foil and salt and pepper.
Cook on barbecue for 10 minutes on each side.
Remove from Barbecue when veggies are tender. Open foil and add shredded cheddar cheese. Close foil to melt cheese.
Serve with smoked sausage, browned on barbecue.

Re: Favorite Recipes
Since some crazy person was talking about canning peaches (which we don't get very well here in MN) I started thinking about apples and the orchard that is just 1 mile from my house... They will be opening opening soon I think... Anyway, I started dreaming of Apple Crisp and how I could eat the whole pan!!! Cathy was asking for the recipe so here it is: Compliments of Betty Crocker
4 Cups Sliced pared apples (I have one of those Apple Peeler Corer thingees from Pamper Chef--works GREAT)
2/3-3/4 Cup Brown Sugar (packed)
1/2 cup All purpose flour
1/2 cup Oats ( I love the oatmeal, so I had a little more)
3/4 tsp cinamon
3/4 tsp nutmeg (which I don't like so I skip)
1/3 cup butter or margarine softened ( for my money, it's gotta be Butter)
Heat over to 375, Grease square pan 8x8x2. Place apples in pan. Mix remaining ingerients thoroughly and sprinkle over apples.
Bake 30 minutes until apples are tender and topping is golden brown. Serve warm with Ice cream, or whipped cream
I always make a 9x13... double up on the topping, cuz I like it THICK on top. I've used Haralson apples, and since they can be a little tart, maybe put in a little more brown sugar. I've even used a couple different types off apples mixed up, but right now I can't think of which ones. When I slice the apples, I just keep going until the pan is good and full cuz they shrink when cooked. Some where in the baking time I poke at the apples to make sure they are tender, if not and the crust is getting too brown I cover with foil for a few minutes, then yank off the foil.
My mouth is just watering thinking about it
Enjoy
