SUPPER CLUB - Fri, Sept 2nd
Good Morning!
We have cooled off considerably the past few days. 55* this morning and will be going to upper 60's today. Rained all night Yay!! Our plants will be happy!
Our friends arrived yesterday. The construction is heavy on our road right now and we are all so thankful that they didn't bring their 40-foot fifth-wheel (their full-time home) but left it in storage an hour away. We were having to use our neighbor's driveway and then drive across grass to get to our house. Trailer would never have made it!
I made chicken enchilada casserole for them. Very good, but kind of gloppy. I think I would add a few more layers of flavor, texture, and color. Like sliced black olives, green chilies, and maybe some diced sweet red pepper. Some cumin, and definitely more heat.
CHICKIE - no, I doubt you have my Slow-Cooker Southwest Chicken recipe so here it is:
SLOW-COOKER SOUTHWEST CHICKEN
from mary z
2 cans black beans, rinsed & drained
2 c. chicken broth
1 14-1/2 pz can diced tomatoes with chilies (I used Rotel)
1/2 # white chicken meat
8 oz salsa
1 c. corn (frozen or canned)
1 Tbsp dried parsely flakes
1 tsp cumin
1/4 tsp black pepper
combine it all and cook on LOW for 6-8 hours, until chix shreds easily. Return to cooker. Heat through.
Serve over hot rice. Enough for 4 or 5 servings
The Rotel tomatoes made it pretty spicy so you might want to add a "dollop of Daisy" to cut the heat if you are Doyal. Or not use Rotel tomatoes, but regular ones and spice it up with red pepper flakes or sauce.
CHICKIE - sounds like you had a fun, though exhausting day with your sister. Did you buy anything wild and wonderful? and yes, our old trailer did sell quickly. But used rigs of that model are much sought after. And hold their value. After 15 years we still got almost half what we paid for it brand new.
BECCA - I will tell my friend, Linda, that I have another friend that is probably a distant relative of hers! She has another relative who is an author, Sharon Kenyon, I think is her name. But I don't know which side of the family she is on
TINA - I'm with you. Daddy has responsibilities and he needs to either find a full-time job that will pay for babysitting, or else an evening job so he can stay home with kids. and for sure get some training for a better job. I thought he had a part-time job in construction. Maybe he should open up a daycare - I hear that pays pretty well! lol!
IRISH - 2 black/white kittens!!? Oh gosh, how could you resist?? That would have been Bill's birthday present for sure! Even though is birthday isn't until next July! lol!! Sounds like the VA is really treating your brother right. They refused to even see my brother, saying he wasn't in the service during war-time. Well, it wasn't HIS fault there was no war. He still volunteered and there COULD have been during his four years. And we need to know more about your GMOB dress!! Color, style, length, etc.
I'm not sure what the day holds. Road construction is halted until Tuesday so we can use our driveway, but it's a rough 'go'. Our guest, Linda, is making us beef bourginon (sp) tonite for supper. we are providing potatoes. I have never had that and really have no idea what it is. Should be interesting. I'm not sure what we are going to do today. Bill and I need to go to IKEA which is a good hour away, so maybe we'll all do that. IKEA is like an amusement park with furniture so I guess it could be called 'entertainment', right? Though on second thought, it would mean leaving their little dog - 1 yr old Malte/poo - in our house (or car!) and either he would chew up anything he could reach or my cats would kill him. Maybe we'll stay home and play dominoes.
What's your plan for the day and for supper. It's Friday!

Good morning! We are cooler here… just no rain in the forecast… I’m still quite happy with the daytime 80s rather than the 90s.
Mary—thank you for the recipe! I think that will probably be next week, and I will be using the Ro-tel or the Hatch version I found at the store. Doyal can use the “daisy” if he needs it… actually, it’s always good with SW flavors. I’ll use a mix of chix for him… he likes the dark.
Irish—I meant to tell you… I know exactly what “redding” means. Grandma used it. Generally it was for “redding up the table” after we ate and get the dishes done. I think she also redded up the laundry on laundry day. Maybe her family came from Pennsylvania… ???
Mary—I didn’t buy anything wild and wonderful, but I did get some sweet and hot jalapenos in a jar and some honey jalapeno goat cheese. (I think I see a sweet and spicy trend there…) Actually, I also like the sweet Thai chili pickles. But, I don’t need the sweet to like it hot. That’s a super value on your Rover!!! I know you will enjoy Silver for many years.
Beef bourguignon… all I know about it is that Julia-Julia was always trying to make it. Enjoy! You can tell us all about it! I think it’s a fancy named French stew using wine in the “gravy”. I loved my IKEA visit, and it was like entertainment. It was 1993 the only other time I was in an IKEA. We are definitely off the beaten path here. Yes, a one-year-old puppy CHEWS and CHEWS!
Dinner tonight… whatever falls out of the fridge when I open the door. There is actually my beef left from last night that is a cousin to beef bourguignon, some broccoli, salad to be made… we won’t starve. It’s Friday Fridge Finds! Tomorrow is grocery day!

Hello everyone,Cloudy here today & cool.We had a thunder lightening storm yesterday which cooled it down.
Maryz Sure wouldn't want my new Home chewed on.Best play games.There are a lot of descendants of DB as he also showed up in my DHs genealogy.It was his Sister that was on his side.They lived not too far from where DH grew up.

Tina I soo agree on the man being the bread winner.Our DGD is working only until her DH gets his Doctrate degree which will be a yr.Will be so happy for her & him.

Good late morning from a sunny but still cool, SW. Pa...There sure is a hint of fall in the air and I'm not sure I'm ready for it.....
Mary, Yes, the VA is treating Jim very well, so far....I just hate to hear so much bad publicity being said and not enough people hear the good they do....I agree, those kittens would be a purrrrfect birthday gift...How I wish you were closer.....I had only ever been to IKEA once and I loved it...Terry and the boys insisted I go with them a couple of years ago and it was so much fun...Plus they had the best meatballs and a special something berry drink, that the kids went crazy for, lol...AND then when we were near the end, I found the best cinnamon rolls (even better then mine) and had to bring them home...When our Dan got his 1st apartment he furnished it with IKEA stuff and he's still using some of the furniture....Maybe you could take the little fur baby with you, it might be a pet friendly place....
AND my dress, is Egg plant in color, sleeveless A line with a 3/4 length jacket and comes to just below my knees...Has some shiny thingies on the dress top and on the cuffs of the jacket...It is kind of pretty and purrrrfect for fall...Kathy is wearing dark royal blue/navy so I didn't want anything blue......Heck, I could have worn robe and Pjs, Cari wouldn't have cared, lol......
Not much happening in our neck of the woods although we do have a neighbor getting all new windows...I told the other neighbor, Donna, if she's not busy, we can get our lawn chairs, sit on the street and watch...If it gets warm enough, those guys might even wear shorts, lol......
But, the house is in order, sheets are changed and just took an apple crisp out of the oven....We might take a ride this afternoon, I want to go to the farm and get some decent tomatoes.............
As for dinner, nothing is popping up in the old brain yet...If nothing else, grilled cheese (with fresh tomatoes) a big old salad and apple crisp/vanilla ice cream for afters......Easy peasy......

Irish--I brought back cinnamon rolls for DH from Ikea. He is loving them! I wish I had gotten some meatballs. I had some ice packs in a cooler bag, but I hate to transport that long without more ice packs. We were over an hour in a traffic jam (for a wreck), then over 2 hours regular travel time. We started leaving KC at 6:00, and I got home at 9:30 p.m.
