SUPPER CLUB - Thursday, April 23rd
Good Morning!
CHICKIE - love your new little calf! Glad he/she made it through the breech birth. What a way to celebrate Earth Day! all I did was plant chives.
IRISH - so happy you didn't have armadillo for supper! I didn't think I had to put a ban on that!! But I bet that little eaglet was proud of himself!
BECCA - sorry your lawn tractor was 'lost in transit'. How does stuff like that happen?? and so often?? I hope you have it today!
JANA - happy diaper bag sewing! I hope your T-storm passed you by yesterday. Arroz con pollo sounds good to me! I've had it in restaurants, but never made it - at least not how it comes to me in the restaurant!
JOANNE - those rainy days can make one tired! My DH has never been a big hot dog fan. But he'd eat burgers every day of the week if he could!
LADY CAROL - I think you get the ribbon for worst day in Supper Club! I hope both you and your car are an easy fix!
TINA - you are wearing me out with all that yard work! I did plant 2 Chive plants in a pot yesterday and called it good! lol!
The chicken jambalaya last night was a keeper. (I think I called it gumbo, but I mis-remembered it) The recipe is in the back of a book called "Skeleton Letters" by Laura Childs. It's pretty easy. Because Chickie asked, here it is:
2 Tbsp butter
1/4 c. onion, chopped
1/4 c. celery, chopped
1/4 c. bell pepper, chopped
1 can (14.5 oz.) diced tomatoes
1-1/2 c. chicken broth
2/3 c. white rice, uncooked
1/4 tsp garlic salt
1/4 tsp black pepper
1/4 tsp hot pepper sauce
2 c. cooked, diced chicken
Saute the onion, celery, and bell pepper in the butter. Stir in tomatoes, broth, rice, garlic salt, black pepper, and hot pepper sauce. Bring to a boil, then reduce heat. cover and simmer for about 20 min. Stir in chicken and heat through. Serves 4.
What I did: I used fresh garlic, sauted it with the veggies, and skipped the garlic salt. For the tomatoes, I used Rotel diced canned tomatoes which are spicy enough for us so I left out the hot sauce.
Tonite - I think I'll pop one of my frozen meat loaves into the oven with some potatoes to bake. And a salad and maybe some corn.
What's on the menu for you tonite?

Hey, Irish--When we serve armadillo for dinner, we call it "Possum on the Half Shell"... It really makes it more classy, don't you think?
Nah, just kidding! Did you know armadillos can be carriers of leprosy? That's one critter I WON'T be cooking for DH!!! (Or possum!)
Mary--thanks for the recipe! I think I can get away with it here... you know DH and vegetables, but he does like rice. I like anything with RoTel! I think I have the makin's for it, too... I think some of those little pink ocean crustaceans would be yummy in it as well... notice I didn't really SAY what they are!
You will have to laugh at this one... I did the Earth Day quiz on Google yesterday... My animal that I am is a GIANT SQUID! ---Tenacious and git 'er done! I do seem to have my hands (tentacles) in a lot of things at once...
I was thinking of steak for DH, but maybe the chicken jambalaya will make it to the table instead... I also found a recipe for snickerdoodle gooey butter cake... if DH had it for dessert, he could possibly forget he had chicken and not beef...
We'll be checking the calf today. Looked like he was doing well yesterday despite his difficult birth. He was kind of wobbly at first and didn't stay on his feet long, so we will be making sure he/she is o.k.
Aaroz con pollo is definitely yummy! So is aaroz con crustaceans... Just sayin'...

Re: SUPPER CLUB - Thursday, April 23rd
Good morning from a cold, overcast, yucky SW. Pa....Winter has returned and it's not nice...At last night's Pirate's game they had sleet, snow, rain but managed to play and win....Maybe that's what it takes....
But, our furnace is blasting, once again and thank goodness I kept out a couple of sweat shirts when I was putting away the winter stuff....
Mary, your new dish does sound good but I don't think I'll be making it...Just don't think if would be one of Jim's favorites...But, I will send it to Kathy, she's always looking for something a little different....
Oh my, you gals had me laughing....I think around here, armadillo would be on my banned list besides very hard to get, right???But, the eaglet was so proud of him/her self...Won't be long before that one flies off to join the other eagles...It's sad to see them go but happy to know, they are soaring high and free...
Sorry to say I didn't do anything special for Earth day, don't think I even stepped outside...Now today, I'm on my way to meet the gals for lunch...Once just got back from her winter in Florida (boy is she sorry she came back)....Jim will be going to help with bingo and I might have a few errands to run but that's our day.....
Becca, sure hope hubby gets his new toy today...It is exciting to get something new....Lost in transit, that's a common excuse...Last year, I had ordered an electric mower and sure enough, lost in transit..Then made the mistake of ordering another and after getting it out of the box, 1 strip across the yard and the front tire shattered...That one should have been lost in transit also, lol....
Chickie, that new baby is so darn cute...It doesn't take them long to find the "milk source" does it? And that cake sounds really, really good....I wouldn't even need the chicken or the beef, just give me the cake....Think you should share that recipe.....
Carol, My heavens, girl friend, what a day! As Mary said, you really do deserve some sort of award... Sure hope everything is in good working order and no more repeats.....
As I said, I'm headed to lunch and we all know, that should mean no cooking for today...But, if Jim insists on eating, I do have chicken patties in the freezer and lots of soup....He sure won't starve....
Happy eating.....................

LOL I think that armadillo should definitely be banned
Mary, your chicken last night does sound yummy and I have chicken thawing, it's a sign LOL
I was outside again last night watering a little but mostly watching the fish and trying to earn the turtles trust. Then it was time to come in and cook. I wasn't feeling very well last night, I had a cold sore pop up on my lower lip and it spread to inside my mouth and my chin and neck are very touchy today. I watered my big mulberry tree this morning and I'm calling yard work done for now. Easton and Rosie took the opportunity to get in the water
LOL
Chickie, I hope the calf is doing good, they sure are cute. Frankie's cousin had a 2 headed one born a few weeks back, it died pretty quickly they said, I didn't go look at it, it's too sad.
Irish, why do you keep invited old man winter back? Tell him to hit the road
LOL We're already getting in the 80's here, warming up a little too fast for me. Where's the happy medium?
Tina

Good Evening All.....another sunny day with accompanying chilly wind........
Today has also been a better day on the home front too.....the sewing room still needs a bit more tidying.....but the bulk has been done......that will teach me(until the next time)to lose things I don't even remember having in the first place......
now... I must tell you....I have found a card with "Collective Nouns for People "......I will put a few on each day.....some of them are quite fascinating......you do realise I am stalling in the hope my quote notebook will make an appearance very soon.....I may even find it in the upheaval of the sewing room........
A Host of Angels....A Company of Archers.....A Knot of Astrologers....A Thought of Barons.... A Fighting of Beggars....A Bench of Bishops....A Blush of Boys.....A Feast of Brewers.....
Actually... just thought....if you find this a bit yak.....I can stop.....a lot of these are from long ago history....
and so to food.....todays menu.....Egg Chips and Fried Tomatoes......I found lurking in the depths of the freezer a Chocolate Fudge Cake.....that was todays afters....
Carol
If you don't mind I will hang onto that Ribbon.....try to collect my Gold Stars to put on it.....aha might get get to be a 5 Star General

Mary, I copied your recipe...Earl may like it...! He usually likes his food "separate"...doesn't care for "mixed up" food, like casseroles, etc. He does like rice with stuff, though.
Tonight I browned up some stew meat and onions and put them in the crockpot with beef broth to slow cook. I'm doing noodles, shoe peg corn and brussel sprouts...
You know for years I have tried to brown stew meat...flour and fry in Crisco..and it hardly got brown and tasted like yucky flour. On one of the cooking shows they said to use half olive oil and half butter...and fry in a hot skillet...perfect! The butter browns well and tastes good...the olive oil keeps the butter from burning! You all probably knew all that, but I'm just too excited!

Good afternoon,
Leftovers tonight - easy for me.
Joanne - that is a good trick - learned it long ago and don't put to much of the meat in at once - do it in small batches. Be sure to de-glaze the pan - all those yummy drippings make great flavor in your dish.
I got the fussy cuts done and laid out how it should go. Semi using a pattern, so need to get the blocks set out before sewing.
Enjoy!
