SUPPER CLUB - Monday, March 9th

Good Monday Morning! It's really dark, but that's OK, 'cause later this evening, it will be light!

Scottie was all barky through the night. and we could hear dogs through the neighborhood barking, too, kind of in waves. We think something big went through the woods. At the dog park yesterday (1.5 mi. away) there was a notice of bear sightings in the area. And there's been a cougar spotted about 5 miles away from us. The coyotes are starting to look good to us now! Needless to say, we no longer let the 'kids' out at night anymore. So Scottie does his community barking from inside. On our bed. He annoys the cats and others.

IRISH - glad you got your potty fixed. If you only have one, it is a bit of an inconvenience when it goes out! lol!

BECCCA - did you say you got your car back?

JANA - I'm glad Sarah loves to cook. I consider her my go-to-thru-you person when I have a question. And here's one for her. I still haven't made my lemon curd and I need to do that very soon. When I make regular jam, I ladle the hot jam into hot sterile jars, cap them with hot sterile lids and rings, set them upside down for 24 and they seal just fine. I have four different recipes for lemon curd and they all say to just put it in a jar and keep it in the fridge for 3 weeks. I want to seal it in jars like regular jam so it keeps. Does she think it would seal adequately doing it my usual way or would she advise a hot water bath for 20 minutes. Or something else?

TINA - what's cookin'?

As for what's cooking here today, It's supposed to be in the low 60's and sunny again, so I think burgers on the grill out on the deck will suit us just fine. We got our deck furniture out yesterday and other than cushions and flowers, we're ready for summer!

Good morning,

Mary - I will check with Sarah on the curd - she is glad to help. Second - we looked at the lityle frying pan - it was for camping only 12V, so I can't use it on regular house current. But that made us think out of the box and we are heading to Cabelas to look for one, Thanks!

Stu is having his wisdom teeth pulled right now - so Ethan is with me - Sarah is playing nurse. They should be home shortly.

Dinner - chicken - getting to be a broken record - DH has blood work to be done. Sometimes I get red meat happy and that runs up his numbers, so I need to be good! LOL

Weather here is perfect! Warming up nicely and bright sunshine. Later this week, snow will be back for just one day and then back to nice again.

Good morning! I love the daylight time—know it’s only fooling me, but I still love it. I had to let our dogs out in the middle of the night. I just always make them “knock” to get back in so I can check for skunk smell. So far, so good…

We can’t start putting out flowers yet… still lots of time for freezes. April 15 is the usual frost date, but we’ve had later freezes than that the past few years.

I made macaroni and cheese with Spam and peas. DH had never had Spam in his life. When I was a single mom, that was our special canned ham. I scored it and put a mustard and clove glaze on it for special occasions. We had it fried, in mac ‘n cheese, with beans for ham ‘n beans, shredded with a fork for ham salad, sweet ‘n sour with rice… My dd still loves it. She didn’t realize we were poor and couldn’t afford the real stuff. DH was o.k. with my dish and ate a couple of helpings of it. Of course, salad and it was all that was there to eat…

Tonight… I need to thaw something. I’ll have to get back to you on that…

Jana—chicken always sounds good. DH had steak last night, so maybe chicken will be it tonight… Best wishes to Stu!

Good Morning everyone.Sun has popped out after our little rain.

MARYz No car yet but maybe tomorrow morn.Wow Panthers would keep me alert.We have bears here in Summer but you usually do not see them.

CHICKIE DH & I were talking about Spam the other day.We used to years ago make sandwichs out of it.Never did all your dishes.

My DD makes lemon curd but has never canned it.It is very good.

For tonite chicken tenders for me grilled,roasted asparagus & carrots.For DH burger & fries.Think I will make him some brownies too.Becca

Good early afternoon from sunny, getting warmer, Sw. Pa...We still have lots of snow but another day or so and hopefully, that will be gone.....

Mary, you really do have the wild life around you, don't you? So far, no bear or those other things but lots of deer and other nasty garden eating critters...I'm already planning how high and what kind of fence to put around my little garden..Might have to put in a moat with a gator or 2....

Not much happening in this neck of the woods...A few weeks ago, my sister bought fabric for me to make her curtains and I've been moving that bag around and around...Well, today it made it to the cutting table but so far no cutting..I really need to just DO IT! I don't know why I agreed to make them, other than she took me to lunch and I softened......

As for our dinner....It's really not soup weather but I have an urge for veggie soup....Not sure just what else we'll have but the soup is in the pot doing it's thing....And, we have no goodies in the house...Even our supply of graham crackers has dwindled...Wonder if Jim would consider toast with jelly, lol....Might have to break down and bake something......

Maryz - asked Sarah about the lemon curd - because of the eggs in it, it should not be canned. Too many problems with bacteria. If you want lemon curd, Sarah says checks the Ball website for a approved recipe. There are many recipes out there that can cause problems, so that is a safe site to use.

Even with jams and jellies these days, they have now found it is safer to water bath. Not for sealing, but for the bacteria.

Good Evening All.......Its bl...y cold today....and an icy wind is blowing........


THOUGHT FOR THE WEEK:-....YOUR HEALTH IS......YOUR WEALTH.....

well....when I left here for some R and R ....I didn't expect to be gone for about 4 months.....

Sir had a nasty virus called Vera...for on and off 5 weeks.....then the Manflu came for a visit.....so Christmas and new year came and went without us taking any notice.....in between my nursing duties I did get a lot of sewing done and did finish all the quilts needed....trying to remember how many now......think it was 5 or 6......but 2 were new baby ones....so they don't take that long.....just finished and posted one for a cousin"s 60th birthday....she posted a photo on FB and I shared it to my page....
this is the cousin who took me to a quilt shop when I visited last October.....she has started having classes there.....
we have another baby (GGS) due in june....so another baby quilt is in my future......
Our Willow has now been officially classed as disabled....which means Claire now has a Blue Badge for the car...so she doesn't have to pay car-parking fees...and gets an allowance that will help towards the petrol.... this is reviewed every 2 years...

I have treated myself to a Tablet....so between that.... my windows 8 and my Smart Phone....which is smarter than me....my sanity may never be the same.....

So todays menu at this abode.....Roast Chicken....Sage and Onion Stuffing....Roast Potatoes....Carrots and Green Beans.....Apple Strudel and Custard for afters.....

take care and hopefully back tomorrow.......

Mary, hmmmmm I just can't decide what I'm making tonight it might be forbidden food on the grill because as much as I love to eat it I don't like my house smelling like it LOL I do have my standards ya know ;-)
Irish, Thursday you were telling me about Kathy growing chilies and making Chile rellenos, I was going to answer you that day but I don't know what happened LOL you gotta try em :-) I bet you'll love em too :-)
well it's afternoon nap time so I gotta go.

Spicy chicken dip and fretoes here:) LOL DH has been bugging me for something not healthy LOL so he brought this recipe home begging for it:)) so yup making that tonight:)
