SUPPER CLUB - Hump Day, Oct 8th

Post by purrfect-lady » Wed Oct 08, 2014 4:08 am

Good Morning to you all! By reading all your menus lately, it would appear that fall has arrived. we're eating heartier!

I never cooked supper yesterday. DH ate a late lunch out with my DB and SIL up north (he went with them to help shop for motorhomes) and he wasn't hungry. so tonite, that SW-seasoned chicken is going into the oven with squash. And I'll steam some rice. I wonder if rice would steam in an oven? Anyone ever tried it? I love suppers where you can just toss everything into the oven at the same time. I also have fresh spinach for a salad.

Hmmmmm what's for supper? DS is here so maybe I'll make enchiladas :-) I'll make it his choice.
Mary, when I did chicken and rice I put the rice in with my chicken the last 20 minutes of cooking time, but I just use minute rice so not sure if this helps you.

I have leftover Almond Chicken breasts from last night. I always cook a couple extra. So, we will have those on top of a big salad. Very healthy, low carb.

Good early afternoon from chilly, windy, kind of dreary, Sw. Pa...Not painting a pretty picture but that's today.....

Not sure if we're eating healthier but we're eating.....Last night's spaghetti and meatballs were quite good, if I do have to say so myself....I used to make up the meatballs, brown them and then throw them in the sauce...Now, I mix them up and put everything in the slow cooker and let er cook! Meat balls are nice and soft and purrrrfect....The apple pies didn't get baked so for sure that's on the "menu"....And the banana/nut bread that was headed for the freezer...Well, let's just say, 1 hardly made it out of the oven....

We have deer in the yard every evening eating the crab apples...In fact, yesterday afternoon, I looked out and a young one was almost ready to knock on the back door...So, when I peel the apples for the pies, they'll get an extra treat...We love to watch them, just don't like them eating my garden or flowers.....Oh well, nature and they have to eat something, I guess.....

Happy eating..............

Good morning,

I see deer all the time, but now that the fence is up all around my yard, the deer seem to stay over in the horse pasture, just on the other side of my fence. They can easily go over my fence, but so far choose not to. My neighbor has the deer in his yard, but the last of his fence will be done shortly. Sarah has a buck that has taken up residence in her backyard. He doesn't' t bother the chickens, in fact the chickens come and sit on him!

Dinner last night was chicken cordon blue with pilaf. I made extra, so that will be served again tonight, with a salad instead of pilaf.

Someone asked what quick and dirty quilt was - it is just a quilt top that we use a width of fabric long enough and the add simple borders to get the width needed. This one is for Ethan, just to keep him warm at night. I will make a good quilt for his big boy bed shortly.

The weather is beautiful here today, just about purrfect! But alas rain is in the forecast with snow in the mountains. Won't be long until it is on the valley floor.

Enjoy,
Jana

Good Evening All.......from a very wet Hereford.......the rain is absolutely piddling down as I write......but thankfully the wind has stayed away......

Sorry about my quick in and out yesterday.....BUT.....a few weeks ago we booked a coach trip for me to go back to my home town and to meet up with some cousins.....some of whom I haven't seen for nearly 60 years......really looking foreward to it.....then.....we heard about 130 illegal immigrants had been bussed in and were staying at the same hotel I am booked into.....not a pretty picture as both the locals and the paying guests are not happy about the situation.....was able to catch up eventually with one cousin and will be on hand when I get there and we will take it from there......
anyway we shall see.......

Have been really busy with the quilting......there are now 3 babies due in January.....2 are done....1 still in my head....1 I-spy top done and one to go....in my "spare time" my knitting needles are going like the clappers on the baby jackets......and we have had more friends visiting these past two or three weeks than we have seen during the whole year.....not complaining....lovely to see them all.....its just......all or nothing.....and with our trips to the Bristol family.....sometimes don't know if I"m on head or horseback......but will soon be back to boring!!!!!

Todays menu.....Chicken Casserole and Garlic Bread.....no afters....BUT.....Jammy Doughnuts with our coffee in a short space of time.......will try and catch up on all the news and goings on.....when my head eventually catches up with me.....
take care everyone

Carol
