SUPPER CLUB - Thurs.Aug 28th

Good Morning!

CHICKIE - There are some jams that take 2 weeks to set. Your tamale pie sounds like a good idea. I think I'll Google a recipe! I might even have one - my recipe box is one of those photo boxes you buy at Joann's and it' crammed full. There must be one in there someplace!

TINA - I was wondering if you use almond flower. I see it at Costco now Aren't your parents on a trip right now? How are they doing?

IRISH - I'm sure you're still a hot and spicy dish even if you can't eat the food anymore! lol!! Hope you get to go out to eat, but sorry you will be at a funeral.

JANA - is Popeye's pulling out of your area? They've never been in WA - or at least not in any part of WA that I've been in.

CHICKIE - My mom used to make pancakes for supper during Lent. She added various things to make them heartier - crumbled cooked bacon, extra eggs, creamed corn, shredded cheese, etc - but I bet my dad would have loved your apple jam!

LADY CAROL - my DH doesn't cook either except to grill outside or if we are camping he'll cook on the camp stove. But I don't complain because like you said - I don't do fuses, or brakes, or engiines, etc. Besides, he cooked for a few days after I had my hysterectomy. he's a very bad cook. I got well fast so I could get back in the kitchen!! He tells me that in his past life - that's the wife before me - he did all the cooking. That's probably why they divorced!! lol!

Our weather is turning rather quickly and it looks like tonite will be our last night to lounge outside and grill, so burgers it is! With salad. then tomorrow - maybe that tamale pie . . . . ;o)

Good late morning from warm, sunny, purrrrrfect, SW. Pa...Yep, the kind of day that we'd hope would stick around.....

Mary, I like your idea of recipes in one of those photo boxes...I have some of mine in a photo album, some stuck in a big plastic bag and others stuck in books...Kathy had gotten me started on putting them in photo album, (the ones where you put the photos in plastic inserts). She has her's all organized in different albums...Well, I started but I think I'm going to dig out one of those boxes....What I should do is throw away 3/4 of all those "clipped, planned to make someday" recipes....
Not so sure about me still being hot and spicy, more like cool and bland! You are so funny.....

We went to our neighbor's funeral this morning and now Jim is getting ready to go help with the elderly bingo....AND, a gal friend is picking me up for yet another "birthday" lunch....Not sure where we're going but it's food and I'm not cooking it....
Which brings me to dinner....I do have some chicken and rice left over and if not that, can always make hot ham and cheese sandwiches with home made tomato soup....And that baker is still on strike...I think, she's after a raise!

Mary, LOL I didn't know Bill couldn't cook, learn something new everyday ;-) Frankie does better now but when we first got married....yucky LOL if he cooks inside I have 2 choices; soup with grilled cheese or tacos LOL if he cooks outside he can grill burgers, steak or pork chops :-) and he's in charge of making salads :-)
Yes Mom and Dad are on their way to Virginia, they were in Oklahoma City, Oklahoma last night, so far they're doing good.
I'm not sure what's for supper here tonight because I have a hair appointment at 4:30 in town so maybe I'll grab a salad from Wendy's and bring it home :-)

Mary - no, our Popeye's is not leaving, but being built here - we have had to go to Lehi - about 40 minute drive to the first one that opened and now there is one open in West Jorday, about 20 minutes to the north. My new one will be about 5 minutes from the house. They are also building a Togo's Sandwich Shop here - we had those in California and Togo's makes the best pastrami sandwich! Now I want one for lunch! LOL

Dorothy - I have lots of my recipes in a binder in plastic sleeves and boxes as well. I am about to throw out a ton that I clipped as well. I have been good about putting my recipes that I use all the time on my computer - then they are saved for posterity - Sarah and I use a program called Pepperplate - it is free and will even make you a grocery shopping list from your menu list. I am saving all of my mom's hand written recipe cards, just for genealogy sake - some are getting pretty hard to read, but I have them still.

Dinner - last night's chicken didn't appear again - went and got Chinese instead - I needed a fix of soy sauce! LOL Tonight I will probably do polenta and sauce with a salad.

Chickie - when Sarah does apple pie filling, she uses something called Clear-Jel - it sets up thicker than Sure-Jel or Certo. It also doesn't make the filling appear cloudy. That might be what is needed for your apple pie jam.

DD is sick and she's been here since I got back from taking Jazmyne to the dentist, so I guess we're having soup for supper.

Good evening! I’m late to the table tonight. In fact, the dishes are done.

I have recipes in binders and stuck in cookbooks and on my computer. I got the tamale pie recipe online. It uses the Mexican cornmeal that’s used for tortillas. I’ve also made it using regular ole cornmeal.

We used to have pancakes for supper a lot with Grandma. It was too much to make them on school mornings.

Ha, the day I came home from the hospital after my hysterectomy I was putting a roasting pan of ham and beans in the oven. (So much for no lifting.) Late DH did not cook. I understand your getting well quickly!

DH does not cook, but he can fix anything. I’m happy.

Some of the jam is setting up, so I have hopes for most of it.

Jana—I used the liquid pectin called for in the recipe. We did the apples today, and I just mix the flour, sugar and cinnamon in with the apples then freeze it—pie ready. I’ve never canned apple pie filling. For some reason, I think apple pie should be “cloudy” but I like tapioca or corn starch for other berry or peach pies. Guess it was what Grandma made is what I’m used to. She made pies for a café and was pretty well known for them.

Irish—I’m so not organized. I wish I was. My DD is very organized. She used to do my closets for me—rainbows in short sleeve, long sleeve, winter, summer… it was awesome! I want her to come over and do my sewing room and fabrics. I’d go on strike, but I’d starve. When you are out in the country, there aren’t a lot of options.

Oh, guess I should say what the cook made for dinner. I sent the rest of the tamale pie home with DD so she could toss it to her DH to heat and eat while she was chauffeuring kids to soccer, cheer, cheer parent meeting, etc… I popped some of the apples in a dish, added topping and baked an apple crisp. For dinner was brown rice-lentils-black beans and sausage with Cajun spices. It was accompanied by tomato salad (a little lettuce and loads of tomatoes). I didn’t hear any complaints and got some compliments from DH, so he’s not mistreated even if I was busy today.

While the apple crisp was baking, I "butchered" watermelons (small ones) and put in bags in the fridge, then took all the apple scraps and watermelon rinds to the cows. They were happily munching as I left them to come back and get the apple crisp out of the oven.
