SUPPER CLUB - Thursday, April 17th

Good rainy morning. Well, they promised it and it's here - drenching, sogging rain. I'm loving it! As long as it doesn't stick around too long!

IRISH - are you doing your embroidery in colors or all in one color. I'm working on Crabapple Hill's "Hocuspocusville" and there are 12 blocks to embroider. I'm doing them all in dark brown (DMC 938) except I'm doing one little detail on each block in burnt orange. I guess I can call this brownwork, right?

JANA - so how do you fix those green beans? I'm not a big fan so I'm always looking for ways to make them so they don't taste like green beans.

Last night our chicken fajitas turned into chicken tacos. Turns out I didn't have the veggies I thought I had! after all that grocery shopping I did yesterday. So now we have leftovers of that. Maybe I'll add some refried beans and green chilies and make a layered Mexican casserole for tonite with a salad on the side. That actually doesnt' sound too bad (as long as I don't fall into that leftover leftover trap!)

How's the supper plan coming together at your house?

Good morning from still chilly but very sunny, SW. Pa....But, we're going up to about 60 and that's a big improvement.....

Mary, You really do come up with some original dinners, don't you? Very rarely do I make tacos or anything that sounds Mexican... I'm doing my squares in 4 colors...Green for the leaves, 2 shades of mauve/pink for the roses and then a brown for the bird....It is really an easy block, being just xs....Of course that doesn't mean I'll have it done next week....

This is Jim's day for elderly bingo and I think it's my day to run around and spend money....Not sure just where I'm going but somewhere....

I did stick a meat loaf in the oven and probably have baked spuds....Jim loves those twice baked potatoes from the frozen section. The ones with the sour cream or cheese already mixed in...When I see them on sale, I buy a bunch and easy peasy......So that's our menu for tonight....Haven't baked so might have to pick up some goodies in my travels today......

Good morning!

Mary - my beans are really easy - it is a recipe from the Pioneer Woman on Food Network - you basically cut the ends off on fresh green beans, rinse them clean. Then you saute diced onion and red bell pepper for just a few minutes and add the beans, tossing them around in the onion mixture for a couple of minutes. Then add chicken stock, about 3/4 - 1 cup - depending on how many beans you have - simmer for about 20-30 minutes, until tender with a lid on. If you need to add more stock, do so - taste for salt after they are done - the stock is sometimes salty as it cooks down. That's it. I like the Swanson's Cooking Stock, chicken flavor, it is a little more chickeny flavored.

Dinner tonight - I have some broccoli - might do soup, then again serve it as a side and cook some chicken that I have. We will see.
