Supper Club, Monday, Jan. 20th......
I can't believe it's after 2:00 and the table is empty.....I do hate to admit it but I'm really just starting to move today....If I hadn't gotten a shot, I'd think I was coming down with the flue but this too shall pass.....
We're not really thinking of too much food in this house....Maybe some chicken noodle soup/crackers for me and there's still left over pizza for Jim....The baker is still on strike so no afters...........
So, come on, spill the beans, what are you all cooking?????

I don't usually post here on a daily basis. Stopped by to see what you all were fixing today. So I guess I will put in my 2 cents worth.

My DH has been wanting me to fix our family recipe of Chicken Noodle Casserole. It's a family recipe for generations.
The original recipe called for a "stewing hen", boiled and de-boned.
saving the broth. Over the years we have change it a little to bring it into today's cooking habits.
Basically you cook the noodles. Added cooked chicken, whole kernel corn, pimentos, broth, and a cheese sauce made with 1 stick of margarine melted, flour stirred in to make a paste. Add 2 cups of milk slowly as you stir so as not to get lumpy. When thickened, you remove from the heat, cut up l lb. of Velveeta and stir that in until creamy. Then add the sauce to the other ingredients and bake.
It has been a big hit at pot lucks, family get-togethers. etc.
Now that there is just the two of us, I freeze dishes of it for other meals. Just fill containers with mixture BEFORE you bake it. Then you thaw it out and bake, it's just like the day you prepared it.
Dinner rolls and a salad will round out the meal. We don't do rolls, so a couple of slices of bread will do.

Good After Ladies.Warm & 60 & sunny.Rest of week is supposed to be cold.Very!!!
We have been waiting today to hear from our DGS'S surgery.While on Business trip to Mexico he slipped on rock.Broke femurs,Tore the ligaments.He would not have surgery there.Waited 3 days to get home.It is to be done today.I told him I didn't know we had a bionic dGS.
I made black beans over bed of rice & chopped onions on top.Also made sweet potato pie.
Feel better soon IRISH.

Good Afternoon,
It is 4:00 in the afternoon so time to think about dinner. We are having poached "mac n'cheese". I will make a salad, potatoes and vegetable.
Irish - I will bake some cookies tomorrow to take to the guild meeting. When I made cookie dough before Christmas I scooped it and then froze it. Presently there are Oatmeal Cookies and Salted Peanut Crisps as well as Chocolate Chip. I know you are going to say it won't happen at your house, but it is great to have the dough all scooped into cookies before you freeze. We take out just enough to eat and leave the rest in the freezer. It works great.
Becca - Your DGS has a lot of courage to wait 3 days!! Hopefully the surgery was done today and his recovery will progress rapidly. Prayers!
