That recipe is delish - someone here posted it awhile ago and it has been a favorite here ever since! I adjusted it slightly - I use a package of Au Jus mix ( the one that calls for 3 Cups of water) and use two cups of water in mine - works beautifully and we have a ton of gravy - just what everyone here wants!

I just wanted to tell you all.....When I couldn't find my favorite recipe for peach cobbler, I used the one that Georgiapeach had posted awhile back and it was wonderful.....Between Jim and I, we had it gone in short order....Will be making another soon......

Just tried this recipe out for dinner the other night and we loved it! Good for breakfast or dinner and you can vary the ingredients so easily! (I cut the recipe in half for us since there are only 2 of us.)

Crock Pot Breakfast Casserole

Ingredients:
1 bag 26 oz. frozen hash browns
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage (maple, sage or regular sausage)
Salt and pepper
16 oz. bag shredded cheddar cheese

Directions:
1. Spray crock pot and evenly spread hash browns at the bottom.
2. Crack 12 eggs in a large bowl.
3. Mix well (and slowly) using a whisk.
4. Add the milk.
5. Sprinkle in the ground mustard.
6. Add salt and pepper. Mix well and set aside.
7. Cook the sausage on high heat, drain and set aside.
8. Add sausage on top of hash browns.
9. Add the cheese.
10. Mix well.
11. Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
12. Turn the crock pot on low for 6-8 hours.

Some fun variations of this recipe. Before cooking (during prep) you can add:

chunks of sourdough bread
diced chiles
salsa
diced green onions

Zucchini Jam

4c peeled and grated zucchini
1 1/2 tsp lemon juice
6c sugar
1c crushed pineapple with juice
1 box jello (peach) I have used orange and Mirium used Pineapple:)
1 box sure jell

Cook zuc until clear. Add lemon juice and sure jell; cook to boils then add sugar, pineapple, jello and bring to boil for 3 min.

Fill jars and invert them for 5 min then turn back and wait for the POPs to begin:)

Yummy on just about everything:))

Frosted Banana Bars....

1/2 cup of butter or margarine, softened
2 cups sugar
3 eggs
1/1/2 cups mashed ripe bananas
1 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
Pinch of salt.....
Chopped or crushed nuts can be added if you want.....

Cream butter and sugar, beat in the eggs, bananas and vanilla...Add flour, baking soda and salt and mix well....
Pour into a greased 15 x 10 in baking pan...Bake at 350 for 25 min. or toothpick comes out clean when inserted....Cool and frost.....

Frosting..
1/2 cup butter or margarine, softened
1 package (8 ounces) cream cheese, softened
4 cups confectioners' sugar
2 teaspoons vanilla extract..Cream butter and cheese, gradually add sugar ad vanilla, beat well and spread over bars.....

When I made mine, I ended up using an oblong cake pan and they did get a little higher, more like a cake, but Jim had no complaints....Super easy, super good.....
This time I didn't add walnuts but next time I will......

This is the recipe that Tess and Chickie were talking about...sounds delish!

Autumn Surprise Cake

2 cups chopped, unpeeled apples
1/2 cup cooking oil
1 cup white sugar
1 egg beaten
1 1/2 cups sifted all purpose flour
1 tsp vanilla
1/2 tsp salt
1/2 cup chopped nuts
1 tsp baking soda
1/2 cup flaked coconut
2 tsp cinnamon


Mix apples and sugar in mixing bowl.
Let stand for 20 minutes until a juice starts to form.
Sift flour, soda and salt together
Add to Apples!
Add remaining ingredients and mix thoroughly.
Pour into greased and floured 8 inch square baking pan
Bake in 350 degree oven approximately 50 minutes.
Remove from oven and let cool
I frost mine with about 1/2 cup powdered sugar and 1 Tbsp milk mixed together and then drizzled over cool cake. You can also just sprinkle powdered sugar over top.

Tips** this dough will be very stiff and thick. I substituted 1/2 cup raisins for the nuts**

I can vouch for that recipe too - I have been making it for years. Tastes yummy with a scoop of ice cream and caramel sauce. Be sure to let the apples sit and make the juice -that is the secret to this recipe.

Yes, the apple cake is out of this world. It's very important to let the apples and sugar set to make juice. My husband ate 3 pieces the day I made it. It make an 8 inch cake, perfect for a small family.
I found this blog last week and have spent at least 1/2 hour each day reading what this lady has been doing since 2010. She is a special lady who must work in her sleep. The blog is full of patterns, recipes, household tips, quilting, homemade cleaning products she makes, you have to read it for yourself.

That apple cake is pretty much the same as the one I make but my recipe has you adding the oil with the sugar, vanilla and apples and letting them sit for an hour....It's one of our favorites, in fact, Jim just finished our's yesterday......
