Re: Favorite Recipes
Pudding Talk ... I love Paula Deen ... love her recipies .. but I find her desserts just tooooo rich and believe me I love a sweet treat. My favorite recipe of hers is her fried chicken.
You soak the chicken pieces in buttermilk, then dredge in a mixture of self-rising flour, salt and pepper. Cook in hot oil in a big cast iron pan. This is a wonderful way to have chicken.
I love when Paula cooks with her sons ... there is such affection between them ...

My DH gave me a DVD collection of Paula Deen's and I just love watching them.LOL She seems to really enjoy herself. I like to see her get really tickled at something. Her laugh just cracks nme up. lol The cookies she makes with Chopped candied cherries, macadamia nuts & white chocolate chips are soooo yummy. We love them. I have the recipe at home & will share it when I go back. You can get it off the web though. I think she calls the Cherry Chunkies? They are gooood

Re: Favorite Recipes
At one time, I had a great recipe for pound cake. I remember you used a pound of butter, a pound of powdered sugar. I can't remember the rest of the recipe. Does anyone have this?
Also, I used to have a Fruit Cake recipe called Texas Candy Cake. Can't find that one either. If anyone has these recipes, I would love to have them again.

Re: Favorite Recipes
Hi girls,
this is not a recipe, but a request for help.
Ken has bought me a bench-top convection oven, off of ebay.
It has come with VERY vague directions and no "how to's" or recipes, of any kind.
I have no idea AT ALL how to work the thing, the instructions are all gobbitty-gook, they make no sense at all.
Any ideas ladies?

Linda, this Pound Cake Recipe probably isn't the one you are looking for, but it's awesome and very different in the prep.
Pound Cake
2 cups Cake Flour
3 tsp. baking powder
1 1/2 cups sugar
4 eggs
1 cup butter (no substitutes), softened
1/2 cup milk
1 tsp. vanilla
DO NOT PREHEAT OVEN.
Combine all ingredients in a bowl and beat with mixer for 20 MINUTES. Pour into a well greased and floured bundt or tube cake pan.
Bake at 350 deg. for one hour.

Here's another pudding...Quick, super easy, and so, so good....
(Has to be made the night before)
"Eclair" Pudding
1 box (3.4 oz) instant vanilla pudding
2 cups cold milk
1 tub (8 oz) frozen whipped topping, thawed
15 graham crackers (30 squares)
3/4 cup canned chocolate frosting
Have an 8 in. square dish ready
Prepare pudding with milk as box directs. Fold in 1 1/2 cups whipped topping. Stir until pudding thickens.
Line bottom of dish with a layer of crackers cut to fit. Spread with half the pudding mixture, covering crackers completely. Top with another layer of crackers, then remaining pudding. cover with a final layer of crackers.
Put frosting into a microwave-safe bowl. Heat until soft and spreadable. Spread on crackers, coating them evenly..
Refrigerate overnight, garnish top with remaining topping before serving....
