I'm looking for a recipe for fruit where the fruit is cooked, has no sugar added and maybe put it on something like a low sugar low fat shortcake. Again, for my friend who has cancer and can't eat sugar or fresh fruit.
Well, I just found out she can have Splenda so if you have a cooked fruit recipe with that, it would be great!

CINNAMON ROLLS

Scald: 1 quart of milk

In a very LARGE mixing bowl, combine scalded hot milk with:
1 C Sugar
1/2 C Shortening (Crisco or Butter flavored Crisco) or Butter
1 Tbsp Salt
Stir until butter/shortening melts and sugar dissolves.

In small bowl, dissolve:
2 pkg Yeast
1 1/2 C Warm Water

When milk mixture is lukewarm, add 2 beaten eggs, mixing well.

Then, start adding:
Flour - Approximately 5 pounds
Do this by hand with a wooden spoon. Add flour 1 Cup at a time mixing well until a good dough mix and texture is formed.

Knead on floured board, adding flour as necessary, for at least 10 minutes. Dough will be smooth and springy and not sticky.

Divide dough into 2 or 3 balls. Place in oiled bowls to rise until double--approximately 2 hours.

Punch down well and let rise again as above. About 1 1/2 hours.

Punch down and form into rolls of choice.

Cinnamon rolls: Roll about 1/4 of dough into a rectangle about 1/2 inch thick. Spread with softened butter, sprinkle liberally with cinnamon and spread with brown or white sugar depending on your tastes. Add raisins if you desire. Roll up from long side. Pinch edge together to seal with side of roll. Slice approx. 1 inch thick and place in greased baking dish. I like glass best.

Dinner rolls: Pinch off dough and make little balls. Place on greased cookie sheets and let rise about 1 hour until double. If you want soft sides, place about 1" apart, 2" apart if you want baked sides.

Hamburger buns: Pinch off dough about golf ball size. Place on greased baking sheet about 2" apart.

Bread: Use about 1/4 of dough for regular loaf. Roll and tuck ends and place in greased glass baking dish to rise 1 hour or until double.

Bake at 350 degrees: 10 min for small rolls, 15-20 for larger rolls and cinnamon buns, 20-25 min for bread. They will be golden brown. Watch as you bake and adjust time if necessary.

To make life easier (less measuring and dirty dishes), I scald the milk in an 8 cup measuring cup in the microwave and mix the butter/crisco and sugar in it. I use a 2 cup measure to do the yeast/water. Then for a bread bowl, I use the large Tupperware salad bowl. I let it rise in it plus a stockpot with a lid.

Today I made whole wheat by substituting half whole wheat flour and adding 2 T gluten with the WW flour. They are really good!!!

You can frost the cinnamon rolls with a melted butter, powdered sugar and splash of milk frosting if desired.

Sugar Free Cake from Victory Quilt series:

Mix together:
1 cup dried apricots, chopped
1 cup dried dates, chopped
1 cup raisins, chopped
1/2 cup water
1/2 cup walnuts
Stir in :
1 cup flour
2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla
1 stick (1/2 cup), melted
Stir together, pour into greased 9"x13" cake pan. Bake at 350 degrees for 25 minutes.

I had forgotten seeing this and am going to make it! It sounds good. El suggests topping it with Cool Whip and serving it with a cup of coffee. Sounds like a fun get together to me!!

I found this on another quilting site and made it tonight, it was wonderful! Also really easy to make.

Stuffed Greem Pepper Soup

2 pounds ground beef
1 small onion, diced
28 oz can tomatoes, undrained
29 oz can tomato sauce
2 quarts water
1/2 cup white rice
2 green peppers, chopped
2 beef bouillon cubes
2 Tbl brown sugar
1 tsp ground black pepper
1 tsp salt

In large pot brown the ground beef and onions, drain if needed. Add remaining ingredients and bring to boil. Reduce heat, cover and simmer for 30 to 40 minutes, until rice is tender.
You can use brown rice, adjust cooking time accordingly.
This made a lot, with just two of us in the house who eat green peppers I have a lot leftover so I will share with neighbors. I think next time I will probably make half the recipe.

Texas Sheet Cake

In a pan, put, mix and bring to boil....
2 sticks of margarine
1 cup water
4 tablespoons cocoa

Mix following in large bowl and then add the above mixture...
2 cups flour
2 cups sugar
1 tsp. salt

To that add
1/2 cup sour milk
1 Tsp. soda
1 Tsp. vanilla
Mix well and spread in a floured, greased sheet cake pan (1 with sides) 20-22 min at 350....(or test with toothpick)

Icing:
In a pan mix the following and bring to a boil...
1 stick margarine
5 Tablespoons milk
4 Tablespoons cocoa

recipe says to add a box of powdered sugar or use your judgement on the amount...Top with crushed nuts if you like....

Today, instead of making the icing, I used a can.....Much easier!

Barbequed Beef Ribs (Boneless)

boneless beef ribs - 4 (if more, double recipe)
1 cup ketchup
4 tablespoons finely chopped onion
4 garlic cloves, minced
4 tablespoons vinegar
2 tablespoons brown sugar
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
2 dashes hot pepper sauce (or to taste)

DIRECTIONS
Place in a large kettle and cover with water. Simmer, uncovered, for 50-60 minutes or until tender. (this is what the original recipe says - and I still cook in water, but not as long for crockpot)

Meanwhile, combine remaining ingredients in crockpot. Cook on low, while boiling ribs. Drain ribs; place in crockpot. Cover with sauce. Cook all day or until you can't resist the smell any more.

Great with potato salad.

Re: the sour milk question. If sour milk isn't a staple in your house the way it seems to be in ours (insert "LOL" here), you can fake it by removing 1 Tbsp from a cup of milk and replacing it with a Tbsp of white or cider vinegar. Or you can even use lemon juice, I think.

I made the sugarless cake from El's video and it was delicious, except I cooked mine a little too long. It got crunchy outside (fruit inside still moist) It was still good but would have been better if just a little less done. will watch more closely next time. I love dried fruits so it was perfect and they get softer and moister as they bake. Since hubby doesn't care for dried fruit and nuts, I froze it and get out a little at a time. It freezes very well.

Brrr. It's getting chilly here and seems to be the right time for a big bowl of soup and a grilled cheese sandwich. Here's one that is really good.

BAKED POTATO SOUP
4 large baking potatoes
2/3 c. butter or margarine
2/3 c. flour
6 c. milk
3/4 tsp. salt
1/2 tsp. black pepper
1/2 tsp. white pepper
4 green onions, chopped and divided, if desired
12 slices bacon, cooked and crumbled
1 1/4 c. cheddar cheese, shredded and divided
8 oz. sour cream

Wash, dry and prick potatoes with fork. Bake in 400 degree oven for 1 hour or until done. Let cool. Cut into half, lengthwise and scoop out pulp; set aside. Discard skins. Melt butter in heavy aucepan over low heat. Add flour, stirring until smooth. Cook 1 minute stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Add potato pulp, salt, peppers, 2 tbsp. green onion, half the bacon and 1 c. cheese. Cook until thoroughly heated. Stir in sour cream. Add extra milk if necessary for desired consistency. Serve with remaining green onions, bacon and cheese sprinkled on top.
