Re: Favorite Recipes
Farmlady, my mom used to make the same pork chops but instead of broth she used tomato sauce... I may have to make these one day, it's been a long time since I have had them...

Re: Favorite Recipes
HI
Does any one have a homemade noodle recipe and a recipe for chicken and noodles, do not know if it is a casserole or one pot dish.
Chicken and homemade noodles just sounded warm and comforting and I could use some of that.
Thanks up front for any help.

Re: Favorite Recipes
Sorry i pushed the wrong button. Take 1 cup of flour, dash of salt and add 1 egg shell of milk. App 1/4 cup. mix together don't overmix. Put flour on cutting board and knead enough flour in that it isn't sticky. Roll it out and make sure you use plenty of flour on board and cut into squares or strips. Drop them into boiling chicken broth then after they are half cooked i add the chicken. You can add any seasoning that you might want.

Re: Favorite Recipes
My easiest recipe is Bob's Chicken. I found the recipe on the Internet many years ago and it was posted by a guy named Bob. Over the years I have made many changes - I keep forgetting ingredients! (I came across the original printout a few weeks ago and I was shocked!) Here is my current version which I've used for at least 15 years:
Cut some boneless, skinless chicken breasts into about 1" pieces.
Stirfry in your choice of salad dressing until cooked. I have used Italian dressing, French dressing, ranch dressing, barbeque sauce, ...
That's it! Sometimes we eat this at the main dish. Sometimes, especially in the summer, I top a garden salad with the chicken and serve the same salad dressing. Enjoy!

Rum Balls
1 1/2 cups vanilla wafer crumbs (about 50 cookies)
1/4 cup Bacardi dark rum (80 proof)
1/4 cup honey
2 cups ground walnuts
Confectioners' sugar
Combine all ingredients, except sugar; blend thoroughly. Shape into
small balls about 1 inch in diameter. Roll in sugar. Store in tightly covered container. Makes about 2 1/2 dozen.
I always double this as they go VERY fast. Taste better the next day! Good eating!!!
Enjoy

I have been making a version of Bob's Chicken for years. Put your pieces of chicken into a bowl, pour some Italian salad dressing over them and set in frig for at least an hour. When ready to cook, pull chicken out 1 piece at a time, roll in some seasoned bread crumbs, I use Italian, then bake till done.
Yummy !

SNICKERDOODLE MUFFINS
2 sticks unsalted butter
1 cup sugar
2 tsp vanilla
2 eggs
3/4 tsp baking soda
3/4 tsp baking powder
3/4 tsp cream of tarter
3/4 tsp fresh grated nutmeg(I used less than 1/2 tsp)
1 and 1/4 cup sour cream
2 and 1/4 flour
1 cup sugar and 2 TBSP cinnamon mixed together for rolling.(you read that right!!LOL)
1. Cream the butter and sugar until soft about 3 to 5 minutes. Add in vanilla. Add the eggs one at a time and mix until each is incorporated.
2. In a separate bowl, mix together the flour, baking soda, baking powder, and cream of tarter.
3. Add the flour mixture and the sour cream alternately to the egg-butter mixture. Starting and ending with flour mixture. Scrape bowl occasionally.
4. (are you ready for this?!?!?) Using an ice cream scoop, scoop out muffin batter one at a time and drop into a shallow bowl filler with the cinnamon/sugar mixture. Roll the muffin around in the mixture until it is completely covered in cinn/sugar. "Place" muffin in muffin tin.(must be very careful here!) Depending on the size of your tins, you should get 12 to 14 muffins. Bake the for approx. 20-22 minutes.in a 350' oven or until golden brown.
EXTRA INFO; Yes I was able to scoop out the batter!! My scoop was too big I got 11 muffins. Next time I will use a spoon and put the cinn/sugar mixture just on top.
Also mine did not rise up much over the tin. And as they cooled they deflated a little. They did not have the texture of a regular muffin..very moist with 1 cup butter & 1 1/4 cup sour cream. I will make these again to see if I did some thing wrong.
They are delicious...very similar to my favorite cookie.
Have fun and please let me know how yours turn out.
This took me 40 minutes..LOL

Re: Favorite Recipes
I found this on that link that Caroline put in from foodgawkers. I love this stuff, Eatza Pizza use to have this for dessert, but no more Eatza's around here.
Recipe: Strawberry Pizza
8 ounce package of cream cheese, divided (I used light cream cheese)
2 Tbsp. unsalted butter, chilled
1 c. baking mix, such as Bisquick
2 Tbsp. honey
1/4 c. granulated sugar
1/4 tsp. lemon zest (I substituted with 1/2 tsp. pure lemon extract)
1 1/2 quarts of strawberries, cleaned and hulled, sliced in half and lightly patted to dry
white or dark chocolate, for garnish
Preheat oven to 425 degrees. Lightly spray a 12″ pizza pan with cooking spray.
Cut 3 oz. cream cheese and 2 Tbsp. butter into baking mix. Mixture will resemble coarse crumbs. Form dough into a ball, then pat out onto the pizza pan. The crust will be very thin. (Take your time with this step. At first it doesn’t seem like you will have enough dough, but as you work it toward the edges it will cover the whole pan.) Bake for 6-8 minutes or until crust is lightly brown. Cool completely.
Cream together 5 oz. of cream cheese, honey, sugar, and lemon zest or extract until smooth.
Assemble pizza just before serving, if possible. The crust becomes softer if made too far in advance. Spread the cream cheese mixture onto the cooled crust. Arrange the sliced strawberries in a circular pattern over the crust, starting with one berry in the center.
Melt chocolate in the microwave at 30 second intervals, at reduced power, until melted. Drizzle over strawberries. Cut into 10-12 slices and serve. (Unless you invite Jim and me over!)

Re: Favorite Recipes
I had this pie at a potluck, I had to get the recipe. It's so easy and diabetic friendly.
Lemon Cream Pie
One small package of sugar free instant vanilla pudding mix
1 cup sour cream
1/4 cup (or a little more per your taste) lemon juice
Stir all together until all is blended.
Fold in 1/2 big tub of Cool Whip Light.
Put all in graham cracker pie crust and chill. Top with some of the Cool Whip.
I didn't have a pie crust so I put some vanilla wafers in dish and made it like a pudding. It's so good!
