Re: Favorite Recipes
Thanks you all for some great recipes. I'm so glad I joined this group of quilter. I'd love to share some holiday recipes that my family loves. We make cheese olive nuggets or cream cheese and cherry on cracker appetizers, pork pie (tourtieres) for anyone of French heritage. It took me 25 yrs. to get a really good recipe.
If anyone is interested let me know.

Re: Favorite Recipes
Hi Sewngran
Here's the recipe and I hope you enjoy it.
Tourtieres (French/Canadian Meat Pie)
Makes 2 two crust pies. Preheat oven to 400. Bake 25-30 min.
2 lbs. lean ground pork
1 lb. lean ground beef
1 medium size onion, chopped
Place in large kettle and cover with water. Let cook slowly until meat has changed color.(grey) As it cooks I stir occasionally to break up any heavy clumps of meat.
Then peel & quarter 4 large potatoes and put on top of meat and let cook until potatoes are done. Remove potatoes and mash. At this point I baste out a good portion of the liquid but not all. Add mashed potatoes to meat and mix well.
Add: 1/4 tsp. cinnamon
1/4 tsp. ground cloves
pinch of sage or Bell's seasoning
salt & pepper to taste
* You might want to add more or less of the above according to taste.
Mix meat mixture, potatoes, and spices well.
Remove from heat and set aside for 5 to 10 minutes. Make a well in center of mixture and baste out any large amount of liquid. You want a moist pie but not mucky (new culinary term).
Divide mixture between two 2-crust pies. Brush top crust with ice water and bake at 400 degrees until golden brown.
These freeze great. To serve I just pop it in the oven to reheat.
Serve with applesauce or cranberry sauce or pickles.
Enjoy!

Re: Favorite Recipes
CLODL719, thanks so much for the Tourtieres recipe. I have only eaten this one time and really liked it. The lady who made it passed away long ago and I don't think I have even seen a recipe for it until now. I hope to make it over the holidays. I think I have heard that it is traditionaly made in Canada during the holidays, maybe on Christmas Eve or New Years Eve ?...........can't remember. Thanks again.

Re: Favorite Recipes
I think someone has already posted a banana bread recipe, but I thought I would post another. It is made with buttermilk and very moist and tasty. It is a particular family favorite and goes over really well at pot lucks and in gift baskets.
Banana Walnut Bread
INGREDIENTS:
2 eggs, beaten
1/3 cup buttermilk
1/2 cup vegetable oil
1 cup mashed bananas
1 1/2 cups white sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 to 3/4 cups chopped walnuts (optional)
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C). Spray one 9"x5" loaf pan with non-stick spray coating.
2. In medium bowl, blend together the eggs, buttermilk, oil and bananas.
3. Sift into a large mixing bowl : the sugar, flour, cinnamon, nutmeg, baking soda and salt, and blend Add banana mixture and blend well, but do not over mix ! Stir in pecans.
4. Pour into prepared loaf pan and bake 1 hour and 20 minutes or until a cake tester inserted in the center comes out clean. If the top begins to brown too fast, cover with foil. ( I usually cover the last 20 minutes ).
NOTE: I also bake this in a pan that holds 8 mini loaves, and the cook time is approx. 30 minutes. I spray the pan with Pam before pouring in the batter. I bake this more often in the mini loaf pan, especially over the holidays. The small individual loaves are very nice to add to a gift basket, and they cook faster ! The small pans are sometimes hard to find, but are more easily found around the holidays. To find them online, search for "8 cup mini loaf pan ".

Re: Favorite Recipes
We usually make the calorie laden sweet potato casserole, adding lots of brown sugar, pecans and apples. But this year I tried something new and we will be making this plenty of times in the future.
Peel sweet potato, slice into 1 inch slices crosswise. Put on a cookie sheet in a single layer, I lined it with foil. Pour about 1 Tbl of oil over it and rub them around so that they are lightly coated with the oil. I added a sprinkle of salt and pepper. Cover with foil and bake for about 35 minutes, uncover and sprinle about 1 to 2 tbl of brown sugar on the potatoes, this is optional, we only put it on about half of them. Give it another 5 minutes to melt the sugar, the natural sugars carmelize and it is very sweet even without the sugar.

Re: Favorite Recipes
Just reading through the recipes, I saw Banana Walnut Bread....In this morning's comic section, a fellow was given a slice of Banana Walnut bread, fresh from the oven...After taking a bite, he said to his wife, I think you have to shell the walnuts 1st?
We love banana nut bread and will try your recipe....
