Southwest Chicken Casserole
found on Pinterest. I changed it a bit to suit our tastes.
9x13" baking dish, 350* for 30 minutes, 6 servings
1 2 c. cooked, shredded chicken
1 c. sour cream
1 can corn, drained
1 can black beans, rinsed and drained
I can Rotel tomatoes
1 can Cream of Chicken Soup
1 4 oz can diced chilies (not in original recipe but I like them so I added them)
1 pkt taco seasoning (or 2 Tbsp if you buy it in bulk)
1 c. shredded cheddar cheese
2 c. Crushed Doritos, divided ( I used up our stale tortilla chips)
4 oz sliced olives (I added because I like them)
Mix first 9 ingredients in a bowl. Spray a 9x13 baking dish with non-stick spray. Then layer 1 cup crushed Doritos, (or stale tortilla chips if you are lucky enough to have them on hand), all of the chicken mixture, another cup of crushed chips, another cup of shredded cheese, and sliced olives. Bake about 1/2 hour.
Serve with optional toppings: more sour cream, salsa, guacamole, green onions, chopped tomato, lettuce, ??
We did like it with the chips, but it would be tasty without, too. And I only had 1/2 c sour cream but it worked fine. And it passed the DH test. He really liked it! But it's a big casserole! It will feed the two of us for 3 meals. It's great served with a tossed green salad.
