SUPPER CLUB, Monday, Dec 9th
I never got on here yesterday. I spent the day cleaning/expanding tables, making a centerpiece, dragging chairs upstairs, and coooking. But it was a nice day and our dinner party was fun. Dinner turned out great, though I cooked it in a slow oven instead of on top of the stove. And I'd tweak the recipe just a bit, I think. We had cranberry chicken.
I browned the chicken, removed it from the pan, and made a sauce using 1 c. fresh cranberries (frozen are OK, too), 1/2 c. brown sugar, dash nutmeg, 1 c, water, and 1 optional Tbsp of red wine vinegar. Cook the sauce until berries pop. DH thought it would be better to also add 1 can whole cranberry sauce. the recipe says to put chicken back in sauce and simmer, covered, until it's fully cooked. Instead, I put the chicken in a baking dish, poured the sauce over it, covered with foil, and baked it in a slow oven for an hour or so. Served it over white rice with extra sauce on the side. It was one of my better 'experiments'.
Tonite - oh, those leftovers!! We'll be heating up that chicken and rice and making a salad. Lots of leftover rolls, too.
Wish I could share with all of you! I was cooking for 9 and over-estimated. We're good for several nights now!

Good morning from dreary, still snow covered, Sw. Pa....I shouldn't complain (well a little), our roads are clear and it is warming up a bit so maybe the snow will disappear......
Mary, your dinner really does sound yummy and how I wish I could share....It sure beats anything I might have in the frig or freezer....I think today might be the day for the elusive "pigs in a blanket"...They were on last weeks menu but some how got lost....Maybe I'll throw a couple of potatoes in the oven and call it dinner.....Of course that could change since it is still early....Who's to say, someone in this house might decide to go for a pizza!.......

Sarah has a music concert tonight, so dinner is who knows when! LOL You see, we are picking up fil so he can come too. Concert starts at 7, but we need to go across the valley, get fil and the back here, and then take him home! Whew, what we do for our kids! Love them anyway! Getting across the valley is at least 25 minutes in good weather, one way.
Mary, your dinner sounded delish and knowing what a good cook and host you - the party was terrific!
Dorothy -I think pizza would be welcome here tonight!
Still doing uglies for company tomorrow , just a tiny few left and Sarah will be here to help in a few.

Mary, your cranberry chicken sounds delicious!! And it's better to cook too much than not enough! lol!
I didn't get on here until late last night..guess no one ate yesterday! I always eat it's just not always interesting...
Tonight is dinner with the Pringles, but we cancelled...too cold and the roads are "iffy"...plus it's not a close restaurant. We settled for Mama's..and I have a wrap up meeting for the Christmas Walk committee at 7pm...
