SUPPER CLUB - Tues, Nov 12th
Finally, I got on! I don't know if it's been QIAD, the internet, or our computer, but things haven't been going my way for the past hour.
CAROL - I LOVE your saying about time! Hope you've recovered from your quilts and have come down off the stairway!
IRISH - I'm not really a fan, but when I see our Seahawks bowling everyone over like they have been, I take notice. I'll be sure to pay attention on Steeler day!
Tonite I'm making a Mexican chicken casserole that my BIL made for us a few weeks ago. It was so yummy! I've been waiting until I happen to have all the ingredients in the house and today's the day!! I hope it's as good as his was!
My DD has requested "my" pumpkin cheesecake for TG. My?? I don't even have a recipe for it! I checked all through my recipe box. I did make it one year (my DIL confirmed that even though I don't remember it) but I'm wondering what I did with the recipe. So, does anyone here have a special recipe for pumpkin cheesecake? I could go on-line but one from a friend is always so much nicer. It's already been tested!! lol!
p.s. I posted some pictures this morning if you're interested in oohing and ahhhing.

Today we have food from Church they loaded me with.Beef roast,country style steak & gravy,meat loaf ,chili,& veggies.So no cooking. Becca

I did one from Paula Deen - not my favorite - I like just plain old cheesecake! My recipe is from Cheesecake factory - now that I think about it - you could look up a copycat recipe for pumpkin cheesecake from the Cheesecake factory.
Dinner - it is my activity day girls this afternoon - so it is dinner out! Last night I brought home a pizza to bake - so that is DH's lunch for today and tomorrow.
I need to do the grocery shopping - and get my list ready for TG dinner - and start gathering the harvest - that is all the fixings! LOL!!
Well I am off - enjoy!

MARYz Pumpkin Cheesecake
Crust
3/4 c.Graham crumbs
1/2 c ground pecans
2 T sugar
2 T brown sugar
1/4 c. butter
Combine & press firm in spring pan
3/4 c. sugar
3/4 c. pumpkin
3 egg yolks
1 1/2 t cinnamon
1/2 t. mace
1/2 t. ginger
1/4 t. salt
3 (8 oz.) cream cheese
1/4 c plus 2 T.sugar
1 egg
1 egg yolk
2 T. whip cream
1 T. cornstarch
1/2 t. vanilla
1/2 t. lemon
Combine sugar 3/4 c.pumpkin ,3 egg yolks,spices,& salt. Mix well.Set aside.
Beat cream cheese until light & fluffy.Gradually add 1/4 plus 2 T. sugar.Mix well.
Add egg,egg yolk,& whip cream.Beat well.Add cornstarch & flavorings.
Beat until smooth.Add pumpkin mixture.Mix well.
Pour in pan.Bake at 350 for 50 to 55 min.
Let cool & chill.

Good afternoon from COLD SW. Pa...No other way to describe it, it's cold......We had snow over night and although everything was covered and gorgeous this morning, I'm not a fan, as you might have guessed......
I have spent the day running and am now beat....I had an early heart doctor's appointment and then off to JoAnn's....Would you believe, I came out of there with only a big bolt of batting and a skein of floss???? And I also had a purse full of coupons that I couldn't use.....Then I met Kevin's wife and we went to the Chinese buffet and ate and ate and then ate some more.....
And once gain, I'm not cooking...Last night I brought home BBQs and macaroni salad so Jim will be fed......And just a warning, I probably won't be cooking tomorrow either...My sister is picking me up about 9:30 along with Kevin's wife and we'll be off and running (and that includes lunch).....I might stay home on Thursday.......
