Sandy, it's pretty easy. I kinda invented it, and it still needs a little tweaking, but here ya go

3 boneless skinless chicken breasts(there's 3 in my family eating solids right now, you can always use more or less)
frozen chopped onions
2 green bell peppers
1 jar spagetti sauce
cooked rice
mozzerrella cheese

As you can see, I don't really measure ingredients, learned to cook from my grandma. Ok, cook the rice and put a layer in the bottom of a baking pan(used an 8x8 tonight, should have used 9x13) sprinkle with some onions and diced peppers. You can add garlic too, it's pretty good that way. Brown the chicken in a skillet, not all the way cooked, just the outside and put it in the pan. Pour spaggetti sauce over the top and cover with foil. Bake in the oven at 350 degrees until the chicken is at 150 degrees(or almost done, however you do it, I use a probe thermometer) Top with grated cheese and cook the rest of the way to 165 degrees. That's it. I make a seperate one wrapped in foil for DS1 leaving the cheese off because he's allergic.

Hummingbird, I know exactly how you feel:) Hope he gets to come home soon.
