I have done a lot of paper piecing and I use newsprint. I sometimes go to the newspaper and they will sell or give you roll ends of newsprint. Or you buy it in pads at WalMart or some such store.
I do a lot of string piecing on various shapes or sizes and this works very well for me.
When I am string piecing I draw the block on paper, piece over it and then trim to size. I found that if you draw with a marker you can still see the shape from the wrong side when ready to trim.

It depends on what I'm piecing. For string piecing, I've got an old phone book I'm using. If I need precice points, I like to use velumn so I can see though it.
