Bringing thread to the top before sewing?

I am working on my largest piece yet - only 18 inches square, and I have some questions on techniques.It's a small checkerboard quilt.
I've read that you should always bring the bobbin thread to the top so you can hold both threads when you start sewing. My question is what do you so with the thread when you are done quilting? Do you pull them to the back and knot?
Should I do a lockstitch once I pull the threads to the top and then cut off the thread from the front? Do I lockstitch at the end?
